Why didn’t you just remove the exhaust manifold bolts instead of cutting the pipe?

It's a good video, lots of good to see steps and the mechanic describing what he's doing is good, but at 11:55 I noticed he looks like he isnt being very safe with the carberator as it's sitting in a unsafe place by his safety glasses by the windshield, it might fall on the floor. Or maybe he is planning on using a new one after and he knows it's sitting there? But the video is a good video.
