Yep, in science terms mayo is an emulsion. When it is frozen, ice crystals form and when it is thawed back out, the emulsion separates into its liquid and solid components. For the record, mayonnaise, and mayonnaise-based dishes are still safe to eat if they've been frozen/thawed, but their texture will be altered to one that most people find unpleasant.

It great to see you keeping an open mind and admitting the product out of Knoxville, TN is in every way superior to BAMA. I've known this for years having grown up in the area. We have a lot of great things in Knoxville. Mayonnaise, football, stadiums, and some other stuff.
Also BAMA and Miracle whip probably taste and spread similar because they are made with egg whites.

I was a Hellman's guy before i tried Duke's. I'd eat Hellmans all day, but if im buying, im getting Duke's. Never tried Blue Plate, but i also just guessed that it was similar to Duke's.
Miracle whip was always an aquired taste. I ate it some when i was younger and that's because that's what my mama bought. It's a sandwich spread not a traditional mayo, which is why if you don’t have sandwich spread (Kraft) for tuna salad, just get some miracle whip and relish. At least that what we have done for decades. Me personally, i only eat miracle whip/sandwich spread, in tuna fish/chicken salad, or on a BLT (sometimes), or meatloaf sandwich.
Oh, and with the rising cost of mayo, among other things, that's like 40 bucks worth of mayo on that table.

As a kid my parents owned a BP station in western NC. It was the last gas station for like 20 miles. Dad built a tire shop for extra income on the property, and he built my mom a small to-go and curb service diner. They must have sold over a million hotdogs. Dad bought a chili recipe from a local notorious hotdog vendor at a flea market. The hamburgers were made out of slices of tube ground chuck. We used JFG mayonnaise, RC Cola as fountain drinks and sold Moon Pies as deserts. We had half the county coming to buy our hotdogs and hamburgers. We didn't even have walk in coolers. Half the time, we bought sale items from the grocery store to stock our little store. What killed the business is we leased our BP gas pumps and fuel from a douchebag from FL. At the end of the day, we made more money from inside sales than fuel, but fuel was the draw to our location. Meanwhile we were one of the busiest gas stations in several counties. When they sold the store, after several failed owners, they ended up naming the station after me, giving it my first name Jody but spelled Joe D's.

It's really because our grandmothers, and great grandmothers, wouldn't let it go, and now we have fond memories of granny's potato salad, or tomato sandwiches, and we chase said memories.

As a forester & wildland firefighter (NC Forest Service), I appreciate the Smokey Bear [yes, that's his correct name]. As a NC native, there's only one mayo...Duke's. Blue Plate is acceptable if you can't find Duke's. Also, a mayo sammich is some good eatin'.

Kraft is a good "utility" mayonnaise. We keep it in the house because as you said - it's there, it does its job, its not in the way. Otherwise we keep Blue Plate in the house for its flavor. Considering though I've switched hot dog brands because of your Bless Your Rank, I'm liable to give Duke's a try after watching this. Also I had to Google why you don't freeze mayonnaise: "as mayonnaise thaws after freezing, the emulsion will break leaving you with the liquid and acidic ingredients, and oil sitting on top of the yolk base."

It does seem important to mention that Miracle Whip is not mayonnaise. They've recently taken to referring to themselves as "mayo-like dressing," which is just weird.
    Fun video though 👍
PS: It seems like just for a control you always need to figure "Great Value" into the mix?

That new Blue Plate logo is inspired by the old blue and white Willow Ware dishes. They added all things pertaining to New Orleans and Louisiana in general! They added the pelican because it’s the state bird, the paddlewheel from the old time riverboats, the front of the old Mid City manufacturing plant that has now been turned into Blue Plate Lofts and magnolias which is the state flower. Thought those were some facts you’d find interesting!
Something I found interesting is that Reily Food Co makes JFG AND Blue Plate. You’ve taught me something today. They bought BP back in the 70s and now Blue Plate is manufactured in Knoxville! 🤔🤔🤔 Hmmmmm

@user-gr83wr1 I definitely agree with that! There will never be a day when I won’t have mayo open in my fridge and an extra jar in my pantry! 😊. What’s your opinion on the JFG? It’s not available in my area.

@user-gr83wr1 see now I wanna try JFG. Blue Plate blasphemy I know LOL! Especially since they’re both made by Reily Foods and I honestly can’t imagine them manufacturing two TOTALLY different mayonnaise formulations in the same plant. Lemme find out Reily is putting JFG in BP jars or BP in JFG jars and overcharging me! I mean….I’mma still buy BP but they gonna get a serious side eye! LOL!
