Rememberance core unit is March 7th. I took jingliu because she can take double turns and ruan mei kinda does nothing. As long as you have march 7th in the team it should play out very similarly. But I do agree that it depends on what characters you have. Everybody's account has march 7th and she doesn't need much investment so I feel that rememberance is the most accessible.
For rememberance I highly reccomend taking company time, purely because rememberance only needs rememberance blessings so company time reduces the rng because you can specifically buy only rememberance blessings
