The Gut that was cut off is really good cooked with onion. It’s called the “Hua” and instead of cutting out the mouth, you can just squeeze the beak out. Here in Taranaki our Paua size is 85mm so we have learned not to waste any. Great video all the same

Try this: for the 6 paua you had there - finely dice or mince them. finely dice a small/med onion, saute in butter, add minced paua, saute for a few minutes, add enough cream to cover and heat through. delicious! can also do this with thinly sliced paua too.

I miss nz... I really love the ocean, I'm a island girl, all about the ocean the land the sunrise and sunset. I loved being able to drink water out the garden hose and head to the beach for a swim and snack... I miss nz

I like paua cooked this way too. You can remove the gut and teeth by hand though.This way you do not waste any of the flesh. Also fish offal should be disposed of away from the campground.

We have something similar here, I collected some the other day but they are much harder to find as your not allowed to dive for them here. We fry them then slow casserole in gravy & bacon for 2 hrs this makes them very tender with a rich flavor.
"Lucky" Nah that's just a kiwi in general, you will find though that South Island New Zealanders are a hell of a lot friendly than our North Island counterparts. The man that helped you out must have been originally from Southland (bottom of the south island) with his accent, vernacular and that he drunk Double Brown hahaha. Hey Matty, found out about this channel from last night's Ras Kitchen live stream. Cool vid! Our version of Paua in the Channel Islands is called the Ormer. We have restrictions on harvesting them... we can't dive for them... we can only wade into the water at spring low tide and turn over rocks to find them... that helps to keep their numbers from getting too low. I'm not a big fan of the taste, but it was good protein back when times were harder.
I found this one tasted amazing as long as it was cooked perfectly...not a lot of room for error! Cool to hear about Ormer, seems like they have similar species in a few places (Abalone in Australia for example) big up!

My dad loved the Hua (guts). He would eat a plateful for lunch with bread and butter. My brother would just eat the Hua raw and straight off the paua.

No the one's we have are called Green Ormers (Haliotis tuberculata) but we just call them Ormers
