Ingredients:
yolks 6 large (120 grams )
sugar 2/3 cup (150 grams)
oil 1/2 cup (100 grams)
vanilla 2 tsp (10 grams)
water 2/3 cup ( 150 grams)
coffee powder 3 tbsp ( 12 grams)
hot water 1 tbsp (12 grams)
cake flour 1 1/2 cup (190 grams) you may use all cake flour.
all purpose flour 1/3 cup (50 grams)
salt 3/4 tsp (5 grams)
baking powder 3/4 tbsp ( 9 grams)
eggwhites 1 1/4 cup (300 grams)
cream of tartar 1/2 tsp (3 grams)
sugar 2/3 cup (150 grams)
Walnut Fraline:
sugar 1 cup ( 200 grams)
water 1/4 cup
corn syrup 1 tbsp + 1 tsp
walnuts 2 cups toasted ( bake in a preheated oven 160°c for 20 minutes)
Coffee French Buttercream:
sugar 2 cups
water 1/2 cup
corn syrup 1 tbsp + 1 tsp
butter 620 grams ( 2 3/4 cup) Softened
yolks 10 large (205grams)
vanilla 2 1/2 tsp
coffee powder 3 1/2 tbsp
warm water 1 tbsp
Baking time: 40 to 45 minutes ( depending the heat on your oven)
Oven temperature: 160°c
Baking pan size: 9x13 ( You may use 3 9 inches pan or 4 8 inches pan. ) or you half the recipe for smaller batch.

Hello! This icing recipe is perfect for this type of cake. But if you like to use cream, use heavy cream that 35% fat. You can mocha whipped cream.
Heavy cream 500ml
Coffee powder 2 tsp
Cocoa powder 3 tsp
Powder sugar 3/4 cup
Hot water 1 tbsp.
Combine coffee powder,Cocoa powder with 1 the hot water. Set aside
Beat cream and powder sugar until stiff peaks. Add coffee mixture. Beat until well incorporated. ( do not over beat the cream)

Kung malapit ka Lang dito, mag order na Lang ako sayo kc very generous ka sa frosting at nuts.

Where did you learn baking?
Salamat po! Pede nyo naman sya gawing mocha flavor add cocoa powder sa cake ng 1/3 cup. Then melted chocolate 1/2 cup sa frosting. Since 2017 pa po ako nag bi baking workshop nong sa pinas pa ako. Nagbibenta na rin ako ng mga cakes and pastries ko. Then dto abroad nag bibaking workshop din po ako sa wilton para madagdagan kaalaman sa baking at mashare ko po lalo na sa mga beginner palang.🥰

The metal spike helps heat distribution and so cooks the centre properly.

Hi mam. Both golden crown at bakers best are salted po . Hindi po ba maalat pag ginamit both for frosting? I tried bakers best and condensed milk but lumabas talaga yung medyo salted yung taste . Thank you

Hi! I am not an expert in baking and not so familiar with terms. May i know wht do u mean by 1/2 compound,1/2 butter🤔
You can use all butter po. Sinasabi ko lang pag humid sa area nyo you need to use half butter half butter compound para hindi mag melt yong icing nyo or para stable sya. May nabibili po butter compound.
Hi pwede po bng round baking pan ang gagamitin? Anong size po recommended and ilang layers pwede?
Pede po sya sa 9 inches baking pan 3 layer.

Hi. hindi ko nagawa ang tamang pagGawa nito. Mali ang consistency ng cake batter. Nakalagay kc 300grams egg whites. binase ko sa isang egg is 50g, 30g ang white & 20 ang yolk. So 10egg whites ang merengue ko tas 6 yolks. Tama ba ang ratio ko? Hope you have time to reply Ms. Bake N' Roll. Thanks. God bless

Pde po milk instead of water. Kung malamig nman dyan sa Japan kahit yong unsalted butter lang po gamitin nyo. Sa pinas lang po kasi sobrang humid kaya yong ni recommend ko gamitin.
