I have watched over tons of videos on butchering. You are the best at teaching the options and methods. I am in awe. I cannot express how much I appreciate your videos.
I run an Irish pub and learned quite a bit from these videos. I now know how to instruct my cooks to make bacon, amongst many other types of cuts, for when the annual pig roast that we sponsor comes around! I particularly like how you show that virtually every part has a use: an important thing for a private food service establishment to consider :) To the immature folks commenting on this video, this is where your meat comes from. If you don't eat meat, then why are you watching this? Grow up
i also wondered about what knife you are using. my amish friends want to invest in a few new ones, so i was hoping you could let me know. thank you, and happy new year.
what farm do you recommend purchasing a half pig from in the portland oregon area? we went through a farm in camby. not happy. meat is good but the butcher took a lot of the fat/skin. trotters and lard. not going to say any names. i am just looking for a half pig that looks like yours. that i can butcher myself. by the way i love your video. great job.
These 3 videos are great thank you for your time to post this. If people do not appreciate the idea of eating meat or if this video is to nasty for you to watch don't you have made the choice not to enjoy the available resources. For the person who pointed out it take our resources to feed these animals in that case I will not eat any soy burger to make up for the more enjoyable steak thank you very much
Thank you so much for your time and demonstration. I love knowing where my food is coming from and you are an inspiration for us do it yourselfers. I felt like I just finished a food workshop with your style of teaching. Much Thanks
Hi I have a 1 week old dog I am waiting for to be old enough for consumption. I am wondering, would this butchering of the shoulder work on a dog's as well? Thanks. Oh and any tips, etc. would be greatly appreciated!
Wow, I love this chick! Why does this have so many dislikes? This is how your food is made (except the factory slaughterhouses are way filthier... and the butcher for that matter). All of you whining vegetarians need to google the word "omnivore" and realize that you are one. Human tooth patterns prove that we are made to eat both meat and vegetables. Choose not to eat meat, thats fine but don't bash this woman for teaching us what our ancestors did on a daily basis for centuries.
Would like to know of a video that provide guidance for sharpening that boning knife. The curves of that blade I find difficult to sharpen and now I just don't use it. Thanks
Awesome, any change you could make a video how to cut it traditionally into Boston butt? There are no Boston butts in my country, so I'm interested in cutting my own from quarter of a pork :-)
Watched the first 2mins, almost jumping out of my chair at the complete lack of knife handling skills. yes the woman can cut it up, but she will end up doing some serious harm to herself in the future if she continues to bone like that. she's already cut her finger by the looks of things!
@TheRelkaw, I'm a butcher and I was actually impressed by her knife handling skills. You'd be surprised how often we will hold a knife in the "dagger" position to separate primals. Knife work in butchery is a totally different animal from culinary knife work, I know this for a fact as I was a professional cook before I was a butcher.
@@SeanHd00d Ive been a factory deboner for the last 13 years, all around the world. I'm all too familiar with how a knife is held in that position and how to use one. I still think she's a danger to herself and should be wearing the correct PPE. Cheers!
Its funny how the professional butchers are slamming Ms. Davis for her lack of experience, and how she isn't a professional butcher, however, I haven't seen even one of the so called "professional" butchers on this forum who possesses the skills this woman has. Where's YOUR video? It's obvious that she's got butchering skills as evidenced by the fact that at the end of the video, she has a beautiful pile of pig meat, in addition to the fact that she knows how to cook the beast as well. ALSO, her presentation skills are great, and I've not seen any of the critical butchers with the presentation skills this woman has (with the exception of Scott Rea on his RUclips channel). She is what I would call the "total package". As far as the vegans who are slamming her...just change the channel and go find a tofu processing channel. They do exist. For those folks who don't eat pork for religious reasons, again, just change the channel. Nobody gives a damn about your silly dietary prohibitions.
+Michael Dumais I agree, I my self am guilty of that sort of sideline commentary on other topics. It's much more constructive to present a structured rebuttal or alternative, OR, the often ignored option, just not say anything if you don't have anything good to say. Also, the vegans can go evangelize to the kind people who don't appreciate the work that is done to provide their food instead of harassing butchers and farmers.
a firmer grip, less likely to slip I guess, given it's a thick piece of meat. plus it looks like it allows you to cut with more force than if she held it the other way
vegetarian diets consist primarily of fruits, vegetables &whole grains, whole wheat bread, &brown rice. Lentils, beans, nuts& seeds make up the protein-rich portion of veg diets. meat substitutes such as tofu, textured veg protein& soy burgers r allowed. whole grains, beans, nuts, seeds, lentils =high in fiber. Fruits& vegetables contain fiber too, while meat& dairy contain none. Fiber in the vegetarian diet helps regulate digestion so things don't move too fast/ too slowly through the body.
so thats what a hamhawk burger is haha ive been wondering since that Simpsons episode like 9 years ago but never actually bothered to find out haha thanks pretty lady.
This is awesome. In my opinion, if you can't stomach butchering the kind of animal you actually eat on a regular basis, then you shouldn't eat meat. One huge problem in our culture is how disconnected we from our food. People actually enjoy having their heads in the sand when they go to the grocery store and buy all these pre-packaged animal parts without having to think about where it came from, what it originally looked like, what kind of food it ate, how it was prepared, etc. very sad indeed.
I got here from a wedding video.. I just got to giggle my knife in their to take that Trotter off ...lol remember move your pig around before you start hacking limbs off with the saw that sounds amazing I'm hungry now going to fry me up on bacon.
I get so nervous when she holds the knife. She might cut herself badly with that manner. Otherwise great butchering video. I am a female too and been wanting to become a butcher someday.
I have used this video three times and Its been the most useful tool. She knows what she is doing.
I have watched over tons of videos on butchering. You are the best at teaching the options and methods. I am in awe. I cannot express how much I appreciate your videos.
Sir, tip of the hat to you.
Pragmatic explanation of the process of meat preparation for human consumption is, clearly, much needed on this forum.

Truly, a superlative presentation,in its videography, content, and concise clarity. First vid,and I just subbed. Happy New Year,phil>------>
+Phil Leo I think Camas did an awesome job too! Thanks for watching - and subbing!! Happy 2016 to you, too. =)
i also wondered about what knife you are using. my amish friends want to invest in a few new ones, so i was hoping you could let me know. thank you, and happy new year.
Amazing skill on display here. Thanks for providing such a knowledgeable and confident presentation.
Hi! I was wondering if you have any recommendations for a set of butchering knives? What did you use?
This gal is very knowledgeable and does a great job explaining this procedure.
I will watch the rest of the videos.
Being around a South-East asian country, I find this really informational and convenient , especially working in the poor farm areas occasionally.
This lady rocks. How many people who are not professional butchers have these skills in the 21st century?
I have a serious question. Can you turn that last piece the picnic into a imitation prosecuitto or pancetta?
what farm do you recommend purchasing a half pig from in the portland oregon area? we went through a farm in camby. not happy. meat is good but the butcher took a lot of the fat/skin. trotters and lard. not going to say any names. i am just looking for a half pig that looks like yours. that i can butcher myself. by the way i love your video. great job.

Very professionally presented as well as informative. Everyone should know how their food makes it on to the table.
Hi I have a 1 week old dog I am waiting for to be old enough for consumption. I am wondering, would this butchering of the shoulder work on a dog's as well? Thanks. Oh and any tips, etc. would be greatly appreciated!
Gosh! I actually did it correct! Had to watch it again to verify!
I have hair dye in my hair and I'm doing my nails, this is brilliant :) thank you for sharing with us
Great video. Appreciate the explanations as you go along.

Thank you, very interesting and informative video! Appreciate you took the time to make it!
RUclips has become universal Open University for any subjects
Would like to know of a video that provide guidance for sharpening that boning knife. The curves of that blade I find difficult to sharpen and now I just don't use it. Thanks
depends on how they are raised. check out the video 'Pasture Raised Pigs' - they get lots of sunshine.
just heard your name dropped on Bobblehead homestead, lookforward to seeing your videos. watching the live feed of his build,
If you all are such experts then why are you watching a tutorial video? Go back to your mom's basement
oh wow, the pig leg looks like a human arm in the beginning
Food preparation or autopsy?
Another excellent video.
I learned a lot, great upload.
I learned a lot, Thank you.

I think she would benefit from a shorter knife.

Excellent idea about wrapping the skin around lean game meat. I am going to use that trick.

very informative, very succinct, very much greatly appreciated.
THANK YOU SO MUCH
I feel like I just watched Serial Killer 101: Disposing of the Body.
a firmer grip, less likely to slip I guess, given it's a thick piece of meat. plus it looks like it allows you to cut with more force than if she held it the other way
Hi Adrienne. She use Wüsthof knifes, made in USA.
You're an exceptional teacher. You make me feel like I'll be able to do this myself! Thanks for the very informative video.
I dispute the authenticity of your claim. What do they suggest you get the other 95% from? Carbs?
You were getting ready to get me a beer to go along with my piggy sandwich.
Remember?
Camas knows her pigs and butchering tools. I bet she'd be happy to the hair for you ladies.
Great skills. Love the homestyle video. Clearly not your first pig fab!
was a featured video for like a week so i finally watched it
They still let folks eat meat in Portland?
This is really interesting!
awesome tutorial. Thanks.
hi
thank you for saying something nice. i enjoyed this video also.

Nothing sick about it. This is how your food is created.
This chick is awesome. She's petite and feminine, and she's tough and merciless with the knife.
I thought it was a joke. But either way I clicked it to comment. this is hilarious. I was watching a jpop video and they suggested this next.

Point well taken....thanks.
Whats "this" ?
Thank you.
...how do i always get to this kind of stuff
I, myself, am addicted to carbs. I know how bad they are for me, and yet it is so hard to resist white bread, rice and pasta.
love the idea of leave skin on the cut.

You were getting ready to get in the kitchen to make me a piggy sandwich.

I'm not harassing you, I'm responding to comments you've made on a public comments section.
Really... you use a saw to remove the hock... Afraid to miss the joint?
does she get freaky with the pig
can someone tell me why she insists to hold her knife like that?
I have no idea how I got here, but somehow I can't look away.
How do so many people dislike this? They know where their meat comes from right?
Your fantastic..excellent!! Thank you for a great tutorial-
I got here from a wedding video.. I just got to giggle my knife in their to take that Trotter off ...lol remember move your pig around before you start hacking limbs off with the saw that sounds amazing I'm hungry now going to fry me up on bacon.
She knows her stuff! Prepping. Good woman. I would not how to this. You have the know how.

I get so nervous when she holds the knife. She might cut herself badly with that manner. Otherwise great butchering video. I am a female too and been wanting to become a butcher someday.
