Love this dish but Korean style. We do put potatoes and zucchini, onions along with the meat. We use the fresh cucumbef and also yellow pickle radish and raw onion as a side with black bean paste to dip the radish and onion. Koreans love this dish but its origins is Chinese. Love your show Mike.

great recipe Mike! my wife and I made this today, with the exception of the nummy peppercorn couldn't find at 2 chinese stores we dropped by at. Tho we tried the sauce without the version 2.0 of hot oil..and the taste seemed kinda subtle..so we both added some hot oil 2.0 to our individual servings and that enhanced the flavor profile. We made our batch of your hot oil without the nummy peppercorn as well. The end result dish was good with the hot oil 2.0 we were so stuffed the potatoes were a good addition. I'm glad the noodles aren't a specific type means it is possible to add variety to the dish by just changing the noodle itself. We're not as fond of rice noodles so we went with a semi wide shanghai noodle. Awesome recipie!!
Watching you stuff food into your mouth like that reminds me of the way I eat... I just love food! Some people savour the food they love, but when I think something tastes great, I can't shovel it down my throat fast enough. Lol And I get just as enthusiastic as you. I swear, every bite I'm going, "Mmmm!" and I don't even know I'm doing it. You make me REALLY want to eat these noodles. Plus, I love the Korean version. I've never had the "just some sauce with noodles" thing you're talking about because I only go to authentic K-joints, and MAN do they put just as much deliciousness into their dish as you do! But I know the Chinese flavours are a bit different and I'm excited to try them, too!

I’ve made so many of your dishes vegetarian-style using king oyster and shiitake mushrooms instead of meat (personal preference not to eat meat...) and it all turned out great! Going to have to try this one as well. So far, the mapo tofu was my fave.

I think the sauce is called Doubanjiang instead of Doubianjiang. So if u guys are going to look for it in the Asian grocery place, make sure to say it right so they know what u are looking for.
Found your channels last month. I love love Asian food. You give better ideas for dishes than what I can find on Google. I much rather cook at home. All the Asain restaurants around here are very Americanized. I didn't grow up here, so moving here has been painful to the palette.

Then I made it again and added hot chili oil and oh my gosh, it went to another dimension of deliciousness.

i cooked it with chinese soybean paste and chinese plum sauce as my local asian super market didnt have the sweet flour sauce and it turned out really yummy ^o^

But , back to you : One of the many reasons you love the rain & thunderstorms is --there are negative ions in the air and those ions make some people feel really good and I mean really , really good . The rain & the thunder casts a special mood on life . It almost makes you want to push a button on life and make time stand still so you can get your fill of the strange ambience that rain & thunder produce . And one other thing : It is absolutely necessary that your apartment or house is clean on such days .

When I visited my dad in China, we ate a lot of different things. We stopped by a street vendor and they served a rice pancake with a super spicy omelet, delicious! We also ate a lot of fried lotus root, tastes the same as a potato.
got around to making this at last! when I tasted the sauce alone I thought, holy crap it's salty! then mixed it in with noodles and still thought it was too salty. and then after adding cucumbers...IT'S SO GOOD!!!!!!!!! was eating this while watching your shabu shabu video, so double the enjoyment :) Thanks Mike!
I don't think the sauce is meant to be watery though. I ended up with a rather thick paste that kept for about a week in the fridge. Just cook and drain some noodles, microwave a spoon of sauce, chop up more cucumbers, and mix. Maybe try another high water content but bland crunchy element, like celery, cauliflower, or even asian pear?

The potatoes is actually a good idea. The starch in it will help thicken the sauce.

It is very salty. I had no cucumber :( I will add more water next time? Tone down the salty. Otherwise it was amazing!
