He mentioned on a few occasions that he uses them all the time for seasoning and never for actually making a stock. Like he did here: seasoned the sauce with the stock cube rather than adding any salt. And this technique works really well (never expected anything else). I use this hint all the time. Most recent was last night while steaming carrots. Butter, little bit of stock cube. Let it melt and combine. Throw carrots in and cover and wait until it's soft.

Love Marco , as a retired chef he is an idol , I love his no bullshit attitude . I use stock pots nearly everyday at home there is fuck all wrong with them for home cooking . I truly believe he uses them at home for stews and suchlike if you listen to him in interviews he doesn't bullshit and he is right to say that you can't get flavour like a real kitchen made stock unless you use a bullion or a Stockport at home .

Those who make fun of him for saying "there isn't a recipe" fundamentally don't understand what a recipe is or don't put your mind to think what he meant by that. What it means is "don't stress yourself out in casual home cooking when you can't remember exactly how much of what you should put in,", and "don't freak out when you don't have the the exact certain ingredient." What it doesn't mean is that the dish has no structure or boundary or that you could put absolutely whatever you want. The basic structure of the sauce here for instance is clearly creaminess, acidity, and fruitiness and it is within that structure that you could innovate and renovate and add or minus what you want.

This series is genius, he designed all the recipes such that instead of the knorr product you can just use salt and on some occasions salt with some pepper.
Yolo Swaggins you can use just salt and some pepper but the results are definitely not as good.
