Masala Chai: Ingredients:
4 tsp black loose tea leaves
1 small piece of fresh ginger
3 crushed cardamom pods
2 whole cloves
1 cinnamon stick
Milk and sugar to taste
Method:
Finely chop the ginger and crush with the back of a knife.
Break up the cinnamon stick (this really gets the flavour moving!)
Boil the water in a pan, amount depending on how much tea you’re making.
Add the tea leaves and spices and let everything brew at boiling point for 30 seconds.
Take the pan off the heat and let it cool for another minute, then strain the tea leaves and spices.
Serve hot with milk and sugar to taste.
