I have a feeling I’m going to like a little bit of everything to get it like real flour. About to try this for a couple biscuits.

Not sure if you mean the carb quick recipe or the Cracker Barrel recipe, but for regular white gravy, this is as close as I can get with CarbQuick: Put 1 cup CarbQuick, 1/4 cup gluten in your food processor. Run it a minute. Melt 1/4 cup butter or bacon grease in a skillet. Add 1/3 cup of your mixture. Stir well until it starts to brown, about a minute. Then slowly stir in 2 cups of milk. It may not take all the milk. Stir it in slowly until you have the thickness you want. Salt and pepper.
This looks good. Sort of looks like noodles. My family made dumplings that were like little drops of biscuit dough. I think I would do these but I'll cut them thinner like a noodle. Thanks for your inspiration!
I saw where someone had made a roux with unflavored whey isolate protein powder to replace wheat flour and she said it worked!....and from the video it looked good.....I may try that trick when I make this to thicken the broth

I think I over stir it a bit so some of the dumplings broke up a little bit and I also think the dumplings were done cooking more by the five or six minute mark because they were kind of soft. Or perhaps that's just how the carbquick tastes. Anyways everybody loved it! One batch was plenty enough for a large pot. Served five people and still have leftovers. I didn't make a roux or anything didn't need it.

I might like it but I like my dumplings to just be dropped in by a spoon and not treated like wide thick noodles. To me this should be called chicken and noodles, and not chicken and dumplings.
I think it might be regional, but these are not noodles. Noodles are thin and delicate. Dumplings are thick and poofy. Many people make them like you do, but many also prefer these. Folks around here don't consider dropped dough to be dumplings, so it may be regional.
I grew up on chicken and dumplings, rolled out and cut into wide strips, they puff up in the broth, nice and tender. Those drop kind of dumplings I call biscuit dumplings.
I prefer my dumplings rolled out like this, because I grew up on the canned chicken and dumplings that have these types of dumplings. I do drop dumplings occasionally, when I’m in a hurry.

I just made keto gumbo and used Carbquick for the roux. It worked perfectly. The recipe came from "The Cajun Chef"
can you cut these into "noodles" and drop them into pasta sauce on stove and cook the same time frame ?
and you have low carb spaghetti and noodles !
I don't know if they will hold together and I haven't tried that. The look of the texture in the video may be deceiving. They are pretty loose.

How long do these simmer for?
Just a few minutes, until they get solid. Maybe 5.
Have you ever frozen the uncooked dumplings?
I have not tried that. They turn out fine frozen in a recipe, though.
