    My husband is Haitian and I grew up eating traditional mac and cheese in the U.S. I have been making yours for a couple years now. This is by far the best mac and cheese I have ever eaten! My whole family looks forward to eating it on special occasions. We love love love it! Thank you for sharing your recipe.

    Traditional Haitian macaroni au gratin has Edam cheese, which is Tete de Maure. It is actually very similar to gouda cheese in flavor and is also Dutch. So your cousin was right. :-)

    We do use Gouda Cheese (Tête de Moine) in Haiti, which is a cheese from Switzerland.

      +Marajustright I think you mean Tete-de-Maure* ( or edam cheese, from Netherlands) . That's the cheese we usually use in Haiti.

    Your the best girl. My parents are from Haiti but I was born in the virgin islands and grow up here in the states. I grew up on Haitian food and always loved it. But when it came down to learning how to cook from my mom, was a hassle. Lol! I picked up a lot from her tho. I cook Haitian food sometimes but now I'm going to cook more often because I love your recipes. I'm going to try this recipe tomorrow . Keep up the good work. I'm going to be looking out for that legume video. Thumbs Up all the way. :)

    Aldi Supermarket actually sells Gouda cheese. Which flavor you recommend sweet regular or smoked?

      Fritz J I usually get smoked and recently started using a creamy version. I get it from Trader Joe’s and grate it. Hope that helps.

      Charles Joseph you know lately I’ve been covering it and I take off the foil and leave it for another 10-15 minutes so the top can Brown a little.

    Gouda is the closest cheese to Fromage Tete de maure. they are made in same country and have very similar taste

      +Bercline Milcent some people use flour to make a béchamel sauce, everyone has their own way of making it. I've had it several several different ways and I usually like them all. Me personally I skip the flour.

      Growing up, my mom made it with parmesan only. I'm not sure if there was a different type of cheese used besides that one. To tell you the truth I feel like once is has mayonnaise on it, it will have that makawoni au graten taste no matter what cheese you put on it cause sometimes I don't use gouda and I make it with cheddar.

      Kerby Stlouis thats not necessarily true there are different ways of making it . people started using mayo as a substitute. Many Haitians would put eggs or egg whites to the cheese and evaporated milk to give it a thick consistancy.

    Please turn it down. Some people just want the recipe, they don't care for KONPA, or whatever "noise" is in the background
