He was in and out of various high - end well established restaurants from what I recall before opening up his own restaurant in London. He may not have been well known before then but that doesnt mean he was not world class. Being one of the best or at least highly skiled in a proffession doesn't mean everyone will know you. No one knew who were the guys who created the atomic bomb until well after the fact.

If the temperature of the water is too hot when you mix it with the pecorino the cheese will clump up and there’s no saving the dish after that. Gennaro makes it look effortless because he’s got decades of experience 😂
What are you on about. It is indeed cacio e pepe. There are just two ingredients in cacio e Pepe which both are in this video. Pecorino and black pepper. Pasta can be even traditionally spaghetti or rigatoni of which the latter is in fact a more modern thing. You’re just trying to snob yet fail at it.

One of my fave simple dishes, i like a lot of fresh cracked pepper. At one time, when peppercorns were first discovered, they were used in some places as a form of monetary system, fact.
After having tried it I gotta say though, the recipe doesn't work. Maybe I'm doing something wrong but when I make cacio e pepe in a pan it turns out perfectly, in the plate it just gets clumpy …

Ah, lovely. A nice old man teaching a seemingly simple, traditional method on cacio e pepe. Surely this low-tech/pre-cooking-thermometer method has survived through generations due to its ease and automatic control on variables such as heat and will thus prove the superior, near-foolproof method of making cacio e pepe. I shall use this as my cacio compass. Update: I failed.

Check out the cacio e pepe video by pasta grannies. I use their method - grate all of your pecorino into a bowl, and slowly stir in pasta water - first make a ricotta-like paste then keep adding and mixing until you get a thick cream. You can add this cream to fairly hot pasta without fear of nasty clumps. I just did it earlier tonight actually and it came out delicious and glossy!
