I dont think it'll make a huge difference tho, since the rules are set for both players and they're competing against each other. Plus it'd be more brain work to figure out the time for each track i'd assume
Time Trial Tennis: Troy and Nick each alternate picking their favourite time trial tracks, whoever gets the fastest time wins a point. The winner is the first person to get a 2 point lead (i.e.: get the faster time than the person who preferred that track, like a break of serve in tennis)

You should do a flounder fest where the last person in the gp room is the winner, so the goal is to get the least points, and the kid in 1st place is subsequently in last.
You guys should do automatic only for an episode. :P Idk how much it would impact your races, but without a mini turbo it would not benefit you guys. Maybe even use karts while everyone else will most likely go Mach or flame runner.
