I don't have an air fryer, yet I've made frittata before in a large frying pan. To me, frittata is the Italian's view of a gateau and since the recipe calls for using 6-8 eggs the outcome does look like one. Also, it's a recipe that truly highlights how versatile eggs are. As for variations, you are free to add anything you wish; personally, I am not a fan of potatoes. Instead, I load the mixture with more vegetables, frozen too. As for the cheese, it's up to everyone's preference and as for the meat too; goat cheese, mozzarella, sausage anything. Grazzie signore Akis.
