recording captures the engine's window, it's faster and more convenient but it will also capture frame drops, so the output video will have laggy gameplay depending on how demanding the chart is
rendering lets the engine output images of each frame of the chart. its more tedious and slower than recording but once the images and audio is stitched together with something like ffmpeg, the output video will not have lag
basically: recording faster to do but will lag, rendering slower to do but no lag
