- Are you looking for a healthy dish for your family? Arroz Caldo is not only a relatively healthy Filipino dish but the ultimate comfort food. Its’ healthful ingredients of garlic, ginger, and onions go well with the rice porridge and flavorful chicken. This dish is best served on a cold rainy day, as a mid-afternoon snack, or even for breakfast. Don’t forget to top your bowlful of porridge with fried garlic, spring onions, and freshly squeezed kalamansi.
Ingredients:
chicken thigh fillet
regular rice and glutinous rice
ginger
onions
garlic
*fish sauce
casubha
toasted garlic
spring onions
hard-boiled egg
salt. and pepper
Recipe:
Step 1 - Heat oil in a large pot over medium heat. Saute ginger, garlic, and onions. Make sure the onions are translucent and the ginger and garlic are fragrant.
Step 2 - Add the chicken thigh fillet and stir for i minute. Then stir in the fish sauce.
Step 3 - Add the regular rice and glutinous rice. Stir constantly to prevent the rice from sticking to the bottom of the pot. Add the casubha and pour the chicken stock and stir. Once it boils, cover the pot and cook for an additional 10 minutes.
Step 4 - Regularly check your pot to see if the chicken and rice are thoroughly cooked while stirring the pot.
Step 5 - In a bowl, you may add your hard-boiled egg, top your Arroz Caldo with toasted garlic, and sprinkle with spring onions.
