    Lemon Quinoa is a South Indian dish.. here rice has been replaced by cooked quinoa.
    A cup of quinoa contains more protein and fiber than rice.. it has fewer calories and carbohydrates than rice.It is gluten free and has nutrients like zinc, antioxidant and folate. it is easy to incorporate in diet.
    How to cook quinoa
    rinse quinoa in water thoroughly
    in a pot add 2 cups water and add rinsed quinoa
    add Little ghee
    boil for 20 minutes
    #ready
    Ingredients
    rinsed quinoa
    *salt
    *lemon juice
    *mustard seeds
    *green chilli
    *curry leaves
    *cashew
    *chana dal
    *urad dal
    *peanuts
    *hing
    *haldi
    *ghee
    Method
    in a pan add ghee or oil
    *" add mustard seeds, chana dal. urad dal. peanuts, cashews,
    *saute
    *add slit green chilli, curry leaves
    add hing and stir for few minutes
    *add turmeric powder, salt
    *add cooked quinoa...mix well
    *turn off the flame
    *add lemon juice
    mix and serve
    can serve with raita
    *can be served at any time of the day
    can be served hot or cold
