RAW FOOD TOUR IN SENDAI
1. KOTORA RESTAURANT: Yuke + Beef Sashimi
ADDRESS: Miyagi-ken, Chuo 1-1-1, Aoba-ku, Sendai-shi, Miyagiken
🇯🇵 YUKE (Minced Beef): Cut the wagyu into small pieces then mince them. Put them in the bowl. Second, add home-made sauce, sesame oil and a mix of vinegar and miso in the bowl and stir them well. Next, place the combination on a plate and top up with an egg yolk. Finally garnish with cucumber, green onion and sesame seeds on top of the egg, shiso flower on a side.
🇯🇵 BEEF SASHIMI: Cut wagyu into small thin pieces. Lubricate the gloves with sesame oil to shape the cooked rice. Put wasabi on top of the beef slices. Top up the rice with beef. Finally, add soy sauce on the beef slices and put beef sashimi on a plate that already garnished with a shiso leaf.

ADDRESS: Blue Ribbon Building Basement Floor - 2-417 Ichibancho, Aoba-ku, Sendai-shi, Miyagi, Japan
🇯🇵 SHARK HEART: Wash & clean the shark heart carefully. Next, prepare a plate and add Japanese hot radish and oba leaf on the plate. After that, slice the shark heart and put those slices on the plate. Chop up the shark valves and put them next to the heart slices on the dish. Serve it with salt sesame oil mixture and garlic

3. 2ND GENERATION NIDAIME: Basashi + Torisashi
ADDRESS: 150-0001 Tokyo, Shibuya city, Jingumae, 1 chrome 2, Japan
🇯🇵 Basashi (raw horse meat): Prepare a round plate decorated with blue glass paper. Then, cut the meat into small pieces and put them on the plate. Add hot pepper and garlic miso paste on it. Finally add some kujo onion from Kyoto on the dish and serve with soy sauce.
🇯🇵 Torisashi (chicken sashimi): Clean and slice the chicken. Place slices on a plate in a flower shape. Add kuju in the middle of the dish, wasabi and karashi (mustard) on a side. Finally serve it with soy sauce.

This is a really impressive restaurant that can serve raw beef. I tried beef tartare in Brussels... and it is so different. I love how much effort they put into this, to kill the bacterias and then use a good marinade. This is what I call a real chef.
That is super common everywhere. The restaurant you went to is normal. Some pieces of beef can be eaten raw

In Germany it is quite common to eat raw miced pork with bread and onions (German: Mettbrötchen or Mettstulle) and raw minced Beef, sometimes comes with raw egg yolk (Steak Tartare)

If the meat is fresh, bacteria isn't nearly as much of a concern. It isn't explicitly stated in the video, but they did show a live chicken before. I bet the chickens are slaughtered and butchered on site. That means the meat hasn't been sitting around compared to if it were shipped pre-butchered to the restaurant. In many Asian countries actually I think it's standard to buy your chickens live and have them butchered for you. In Southern India I know for a fact it's the only way to get chicken, cuz that tropical climate will make stuff spoil in a hurry, combined with 3rd world living conditions.
Shizuka is the best companion of all his companions by a huge margin. Not only is she insanely beautiful, she is just so charming with her personality as well. If only ONE perfect girl exists, she probably is that ONE.

And most of the places that killed people probably didn’t know how to properly prepare it either. I feel like someone just didn’t do all the steps and messed it up. 🤷♀️
That was one incident that got huge publicity in Japan and yeah it was probably not prepared as it should, I think it was probably the same restaurant as well? Or same provider at least. So it was more of a one-time thing than something happening a lot. And yeah blowfish cases are always people who have attempted to do it by themselves without the proper training and knowledge to do it, in a restaurant it's perfectly safe.

horse meat is common in germany (Sauerbraten and Rouladen) and sicily (grilled thin horse meat slices) . In germany a typical breakfast for workers is "Mett Brötchen". It is a crunchy bun with butter,and a lot of raw chopped pork meat and sliced onions, salt and freshly ground pepper. its delicious

Nice to see you're in Sendai, and OMG you tried the raw shark heart too, I tried it in Kesennuma, same prefecture as Sendai but by the coast, one of the towns worst affected by the earthquake and tsunami in 2011. I was there just one year after that in 2012. The texture was special yeah but tasted good.
Horse meat sashimi, so called basashi is amazing! More famous in Kyushu though, as you mentioned, especially in Kumamoto prefecture, but delicious anywhere. One of the best sashimi there is in my opinion, haha.
I tried raw chicken too and no problem, anyway it's Japan so you don't really need to worry about it, it's carefully prepared and all. And it's, yeah, surprisingly good.
But hey, you need to try beef tongue (gyu-tan) in Sendai, it's famous for it and delicious!
Oh and love the dessert called "zunda mochi".
By the way the Tohoku region is so underrated and it makes me sad, there is so much to explore there and it's quite off the beaten path, not many tourists go there, but it really is a region of Japan that should get more attention than it does. So really nice to see you there!
Would love if you went out to the coast to support some of the towns that suffered in the 2011 disaster directly, and there is some great food there too (of course).

I wish people would get over bizarre dishes from different countries. Sooooooooooooo many people here in the US would freak out and call people psychopaths for eating horse, but what people need to understand is that different cultures have different standards. Ex. people almost have a heart attack when someone says they eat dogs in China. It's not that weird, it's just culture and what meat they choose to eat. Here in the US, we have dogs as pets, but in China, It's no different than beef for us, and there's nothing wrong with that in my opinion.

Pannoci the thing is... like most or all bacteria, if there isnt much or enough of it, it wont make you sick. thats why people can eat raw eggs. even though a little bacteria from the shell did get in most likely.
just then when given the raw egg or egg dish too much time to let the bacteria colony grow... then its dangerous. for those with not optimal immunity. for the same reason lots of people survive well enough eating things using their hands, even if not washed. dry hands not covered in mud didnt give any bacteria that much time to multiply.
sorry, long long reply. but the thought was important in me overcoming bacteria related phobias.
