i find that for steaks having the prep station with mediums is best because if you want rare, cook once from the fridge, medium is already done and well done is cook once a medium from the prep station. With any other steak you will have to cook more than once like how if you store well done you'll have to cook twice for mediums.

A great set up for steak would be three danger hobs pulled into smart grabbers into frozen prep stations. This way you'd only have to place the steaks on to the hobs as they're being used.
