    Your videos are never long enough for me. I get sucked in, mesmerized like, picturing myself right there doing the things you are doing.     I feel like this channel is the only one that shows a true reality of “van life” and sustainable living. I’ve learned a ton of things and I just love this channel. It’s the only channel I secretly wish for longer videos randomly. Like a surprise long video here and there

    This is wonderful to see, young people canning. The chicken is what we call "Ugly Chicken" almost all the canners call it that. It is horrible to look at but the first time you open it and eat it you will be in love. You could have fit the whole 1/2 chicken in a wide mouth quart. push it down hard. You could have made apple pie filling or apple butter so keep that in mind for next time. You are going to be so glad you did all this when you open your first jar. Also remember you can freeze things to can later. I know you will be limited on space, you will also find things that are left over like huge batches of chili and soups can be canned for later also. Great video's!!!

    OMG Linnea the disappointment in Chris's voice when you said no ice cream 🍨 so sad lol. You know you seriously could make some homemade with just a few ingredients.     I grew up in Alaska on a homestead. My mother used to can chunks of moose just like you did with this chicken. She would open a can, drain the delicious juices from the meat, into a bowl and set it aside. She made a roux of butter and f!our, added in the set aside meat juices and a cup of beef broth. This made delicious gravy into which she shredded up the canned meat, and she served this over mashed potatoes.yumm! Mom also dry canned salmon but she added a clove of garlic and a quqrter onionto each jar. Delicious for Salmon chowder.

    You can make apple pie filling or just sliced apples rather than all applesauce. You can make use for sliced apples for apple pancakes, apple pie,cobbler, muffins. I'm in Illinois so I pray your winter isn't to harsh.
    Leaving the bones in Will give the chicken a better flavor

    I love the look she gives at the 10min mark "this doesn't look appetizing" 😂🤣😂.... trust me you will like it & you do not need to cook it "ready to go", you can quarter the apple and make pie filling with them also apple sauce can get boring to eat all the time. You can make apple mead also for those long winter nights by the fire lol

    Its so interesting seeing what and how you are preserving food. I had no idea chicken could be preserved that way! And I love that you are finding ways to reduce waste (making stock and vinegar, feeding chickens) Recently I've been canning my very own homegrown tomatoes in a variety of ways (whole tomatoes, marinara sauce, and roasted and preserved in olive oil) and just made my first batch of jerky in a dehydrator. With the right tools, its so cool how many things you can make yourself. Thanks for the inspiration for new recipes to try

    You don’t have to turn all your apples into applesauce, you can also can the apple….cut up apple pieces, simmer them about 5 min. in syrup you make from sugar and water (ratio of sugar to water depends on if you want light syrup or heavy syrup), then can them (hot pack canning). The canned chicken looks sort of like a strange science experiment….lol….but I’m sure it’ll taste good in the cold winter months. I love watching you and Akela exploring the outdoors together. I feel like Akela’s auntie, from the RUclips side of your family…lol.😊

    Hello, Another idea for apple treats, try dehydrate apple slices with cinnamon. We use Honey Crisp. You can keep any where. We take them on hikes. We freeze most of them as we have lots of room but we keep a lot on the shelf too.

    You can make snow ice cream! It was one of my favorite childhood winter treats. Mix some fresh fallen snow with a lil condensed milk and cocoa powder. 💛

    Excellent and fun Video. I have done a Lot of cannon while living in Oregon for 10 year when my boys were little. I canned venison, fruit snd veggies from my garden. It was fun and lots of work.

    Idea 💡 cut up the apples and leave them a tiny bit chunky - add cinnamon and a small bit of brown sugar & can. Heat it up and with some oats on top for some winter-wannabe-apple-crisp!

    Chris, you may know by now that apples are a bit fragile. I grew up on an orchard, and they bruise easily. When you make them into juice or applesauce, not so important! Have a great winter!

    You should always remove the rings after they come out of the canner. The rings do not keep the lids on. The vacuum seal keeps them on. The reason to remove the rings is to be able to tell at any time if the seal is broken. You could get extremely sick if the seal is broken and you consume the food . On rare occasions the seal does get broken or the seal never happens due to food being on the jar prior to placing in the canner. If the ring is on the jar you can't tell if the food is safe to eat. Never assume every jar is perfect, especially when you are new at canning. These are mistakes that I made. Once I got out of the hospital I had to inspect each jar, luckily only 1 jar had not sealed. I worried that I would be forced to throw out everything, jars and food. I do things very differently now.

    I’m sure someone’s mentioned it but you can use applesauce in place of oil in a lot of brownie or baking recipes, just make sure to reduce other liquids by about half. Take cocoa powder with you, and white sugar (for making caramel!)

    when cooled, the chicken fat floating on top turns into chicken fat again and it's called smultz...I think. you can use iit for frying instead of oil or shortening. When you open a jar, if it's cold and there is a skim of fat on top, scrape it off and save it another jar and keep in the fridge.

    Have you looked into preserving eggs with lime? Super cool, they go in the jar with lime, uncooked and can keep upto a year! If you guys eat eggs, definitely try this!

    You can actually buy - in a can - canned whole chickens. They really look disgusting when you open them up. But boy is it full of good fat and collagen!! That chicken will make amazing sandwiches or even more chicken soup!! I do have a hard time eating the skin if it isn’t crispy but you can put it on a stick over a campfire if it isn’t too fragile from cooking. Otherwise I’m sure your puppers would love the extra collagen too!! I’m excited to watch your winter.
    I just wish I had been able to get a cubic mini this year. I live in a place where -40 is common. Living in my van is sometimes harder than others.

    You may already know, but remember to remove the rings after the jars seal. That way there are no false seals you miss. Especially with any meat you can. Once again, your videos are so beautiful in every way.

      When you do this, do you put the rings back to protect the seal? It seems that any jostling could pop the lids off.

      @@daniellawson652 No. if the jars are properly sealed then the vacuum holds them on. This is the reason to remove the rings.

    Chris' remark about always having chocolate around for a sweet treat is so relatable. Chocolate and peanut butter are my favorite foods. Haha. I'm not a fan of ice cream but I bet you could still make homemade with shelf stable milk and heavy whipping cream. Then use the snow/outdoor temps as your freezer. Get creative. Can't wait to follow your north woods adventure. 💛

    You've spent a lot of time making applesauce. It maybe less time consuming if you made pie filling. You get the firmness of the apple slices, sweetness and flavor from the sugar and cinnamon. And you don't have to peel and mash. You may save yourself some time. I much prefer it to the applesauce, myself.

    I have canned Deer meat once. I added spices and whole garlic cloves. We also raw packed the jars with steak tip size pieces, and I will say it was very good. We used it in stews and vegetable soup. We had of course soaked the meat in milk prior to canning.

      @@daniellawson652 it does but the reason for that is to tame the game taste down out of the wild meat. Deer can be quite gamey tasting to me and my family. The milk makes it taste better to us!!

    Sweet! What a harvest delight, makes me want to do it! How much processed meat in a jar does one look at? Reminded me of museums…(ewe) anyway, when I lived off grid I used to have a special ‘pillow case’ that I put hot, rounded (better for leg bumps) rocks from the fire in my bed at night, hmmmm, that was sweet slipping in bed on a cold winter night!

    We were in Door county a few weeks ago, very pretty area of Wisconsin. I had work in Bailey's Harbor, we also had time to visit the Cana Island lighthouse, and a few farmers markets. We don't like cold weather so headed south already, hoping to be able to do jobs near the North Phoenix boondocking spot where we met you earlier this year. Good luck in the north woods!

    So many questions. Does Chris have his own social media accounts? Does the canning process cook the chicken? Are you still thinking about sharing your bow hunting experiences? If you are not successful with large game, would you consider smaller game like coyotes for survival? Have you been fishing lately? Safe journeys.

    Beef is expensive, but I bet you will want it. Get a dehydrator and cut up some cheaper cuts after marinating them. Put them in a dehydrator for 10-12 hrs and you'll have a great snack. I got a de-ydrator super cheap; it was maybe $40. You can also make apple chips, bannanna chips (sp?) , dehydrated fish, etc. Love seeing a fellow Wisconsinite doing cool stuff. BTW - I think you have enough apple sauce. Just kidding on the apple sauce, btw. 😀

    Y’all should fix some apples like you would use in a pie. Sliced, cooked, spiced. You can fix apple cobbler or even an apple pie! Even though it’s still apples they will have a different texture.
    Hope y’all took all the chicken meat off the backbones you used for broth. Those pieces will make great soup.

    The real north woods move: making ice cream outside. It’ll be cold enough! Sweetened condensed milk. Fold in homemade whipped cream and whatever you want for flavor. Maybe apple pie flavored ice cream 🍎 👀✨

      @@Linneaandakela You also use some of the apple skins to make a sourdough starter. You get natural yeast by using the skins. Then you can make bread/rolls all winter.

    Your chicken and broth will be amazing. No it doesn't look appetizing but it will be great. Some call it "ugly chicken"! I love to can and have been doing applesauce and chicken as well. Thank you for sharing!
