Guys, you probably know that, but I should mention that grit of the diamond plate you use to grade wheels is to be about 2-3 times coarser than the target wheel grit, e.g: For SG#220 - the diamond plate # should be 80; For SG#1000 - the diamond plate # should be 400; For the Japanese SJ #4000 - the diamond plate # should be 1000 or 1200. When you treat the SG wheel with a diamond plate #400, followed by #1000, you get the wheel grit near #1200-1500
In another video Vadim says they are simply the cheapest diamond plates he could find @ $10 delivered. I am UK based so found £10 diamond plate on ebay branded by Silverline
Sure you can, the FVB is both for honing on the leather wheel and sharpening on the grinding wheel "with the stone", "edge-trailing", "away from the wheel". In our other video "FVB for Cleaver Sharpening" I show how we do it, and we also sharpen wide knives this way, but of course any knife can. Difference in the burr you get grinding as you say "with the stone", versus "edge-leading into the wheel" is explained in my Knife Deburring book.
How come my applet I just downloaded has a spot for blade thickness and yours doesn't when shown on your computer for the fvb? Was it something just added recently?

The burr from the #1000 wheel requires a 3-6 micron abrasive to get deburred, i.e. the Tormek honing paste is right on. Not possible to deburr with a 0.5 micron abrasive, diamond or else. An excerpt from my Knife Deburring book: "Talking of mainstream knives, for edges set on # 1000, works well a compound with 3-6 micron abrasive particles like Tormek honing compound; for edges set on # 400 - 600 it is a 5-6 micron compound like Autosol metal polish; and for edges set on coarser grits it is a 5-10 micron honing compound like ZAM or Green Rouge. "
Can't you do the same edge-trailing sharpening and controlled-angle honing on a stock Tormek by moving the support base to the front of the machine? It looks like the FVB provides a more comfortable working height, and perhaps more clearance for large knives or cleavers, but does it offer any other benefits for common sized kitchen knives? We would not mess with our FVB if it were possible at all. In the Tormek frontal sleeves, the support legs are in the way of the knife jig, letting you do only knives with very short blades. Try a kitchen knife yourself and you will see straight away that it is not possible.
Thanks for your quick reply. I have experienced some of those problems and that's what led me here. I made a low profile knob for my knife jig tonight that clears the support arm, but haven't had a chance to really try it out yet. The FVB looks like it's probably a better long term solution. Why doesn't Tormek made a support like this? I know there are some who freehand trailing-edge sharpening but for greater accuracy your product looks like a good idea. Do you prefer to sharpen knives on the Tormek this way?

Your number is correct, but coming from the Frontal Vertical Base applet - it is for use with the FVB and is separate to our Grinding Angle Setter applet. For grinding into the wheel, as normally people do on Tormek, you need our Grinding Angle Setter software for Tormek. In the beginning, people may confuse these two applets.

These two applets are easy to tell apart - the interface has different options, and the caption of one reads "Grinding Angle Setter", while the other "Frontal Vertical Base". Function is different - the "Grinding Angle Setter" is for grinding into the wheel in the normal Tormek position, while the "Frontal Vertical Base" is for grinding edge-trailing and honing on the leather wheel in front of the Tormek. In my Knife Deburring book I have a SEM micrograph, showing that when we deburr a knife on the Tormek Japanese SJ wheel edge-leading, we get a 0.3 micron edge, i.e. x3 times thicker than a shaving razor. This is hardly arm-shaving, and our customers expect a better sharpness than that. In our workshop we use the SJ wheel edge-trailing to mirror-polish the edge, but in this case you still need to deburr it by different means. This way we do get a sharper than razor edge - the process is described in the Case Study part of the book.
We have a dedicated finely graded wheel; you cannot run a sharpening business grading the wheel back and forth. Let me clarify on the diamond plates. A diamond plate cannot revert a finely graded SG back to the #220, you will get a coarser grit in-between; but the original SG #220 that you get after truing the wheel, can be maintained with a #80 diamond plate. To finely grade the SG we use a diamond plate #400; when we want a really fine grit, after the #400 we use the diamond plate #1000 shown in the video. For the Japanese SJ #4000 - the diamond plate # should be 1000 or 1200.

But I don’t understand why you cannot change the grit back to 220 with a 80 grit diamond plate. Or with the Tormek stone grader grader. And that it is possible to achieve insane sharpness 😱with your methods. With just one stone and one honing compound. not sure if the sharpness is because of a wire edge though. This video was taken before we upgraded the Tormek software to include thickness behind the edge.

Just a thought if you used diamond past on the honing whee eg .5 micron would it sharpen better. Thank you John

I've tried Matsunaga (Sun-Tiger) #4000 Japanese stone wheel for Tormek, and Tormek's SJ - Tormek's is the best, we use it - but not in this video
