The OP had the patience of a saint until they tossed all the food... and the OP wasn't "flaunting" the cooking by any means. Why survive solely on take-out and microwave food? And why should the OP be obligated to cook for them? I know i would refuse when they pulled the $5 stunt. You arent the mom/dad there. My choice isn't that and I want you to respect that too. However, this isn't about you or me. This is about Mom. Now, let's discuss and reach a compromise." Stay calm, take a break if you have to. Figure out what dishes can be negotiated on, or if they are willing to bring some of their own. Tell him that you're not forcing him to eat meat, and you're not wanting to hVe this forced on you either. But again, say it's about the family getting together for your mother. Stay calm. Stay cool. Stay flexible.
The mark story reminds me of the story of when his insane Ex-Sil tricked his mom to cook thanksgiving dinner which was a disaster, basically she cooked a vegan meal with essential oils and got furious and decked his mother in the face and started fighting with everyone until she was pinned down
