Gradually ease the choke back in as the engine warms up, it will start to hunt when it has too much choke and falter when too little! If it doesn't then you're carb isn't set up correctly! It's not rocket science! Regarding down shifting, so few of you seem to understand how to do it smoothly, change down then keep the pedal pressed down, that puts you in a neutral, there's a neutral between each gear on a Cub, it's when you let the pedal back up that you get that horrible rapid deceleration. Stick shift car drivers will know what I mean when I say double de-clutch? Well you need to learn how to do that on a Cub!!
I can also see why you say you've been through a few of these! Thrashing the arse off the poor thing trying to keep up with cars! Fit mirrors and turn your indicator off ffs!!

Had a c90 great yolk never let's you down. My mother had the 70 in blue, never seen a yellow nice find.
