Step 1: Creaming Butter and Sugar vs No Creaming
Ingredients
* 173g Room Temp Butter
* 128g Sugar
* 128g Brown Sugar
* 5g Salt
* 74g Eggs
* 4g Baking Soda
* 320g All Purpose Flour
* 170g Semisweet chips
1) In one stand mixer add room temperature butter and sugars and cream together. When they’re well creamed, stream in your eggs until just combined. Add in your dry ingredients and mix. Finally, add in your chocolate chips.
2) In the second stand mixer, add all ingredients except for chocolate chips and mix until combined. Add in your chocolate chips at the end to prevent them from breaking.
3) Shape cookies and bake at 350 for 13 minutes.
Equipment
* Two stand mixers
* Baking sheets
* Silicone mats
Step 2: Chip vs Chunk vs Wafer
Ingredients
* 3 batches chip-free cookie dough
* 1 portion choco chips
* 1 portion choco wafers
* 1 portion choco chunks
1) Add equal measures of chips, chunks, and wafers to each cookie dough. Shape, bake, and taste test.
Step 3: White Sugar vs Brown Sugar vs Half and Half
Ingredients
* 1 Premade batch white sugar dough
* 1 Premade batch brown sugar dough
* 1 Premade batch half and half dough
1) Shape cookies and bake at 350 for 13 minutes. Taste!
Step 4: Frozen vs Fridge vs Room Temp
Ingredients
* 1 batch frozen shaped cookies
* 1 batch fridge shaped cookies
* 1 batch room temp shaped cookies

I love that they end the episode in a puppy pile. Knowing that Josh finds touching weird at times just makes Vi stroking him like she’s trying to get a fly out of hair even funnier. And Trevor squeaking is always a delight.
They're the perfect group of friends to annoy each other.
I feel like it says a lot about the people you work with and the environment you work in when a relatively new hire like Vi is already comfortable enough to stroke her boss's hair on camera like that.
The entirety of myth munchers is just Josh ignoring various steps in the cooking process because they take longer or their higher effort, claiming that they're myths and then learning that he is dead wrong and I am so here for it. I, too, refuse to measure ingredients due to ADHD and am a terrible pastry chef because of it. I love you, Josh. Never change!
Trevor's seemingly newfound confidence on being THE cookie baking king paired with his milk and cookies tattoo is delightful. I wish I loved anything as much as he loves baking cookies.
Theres something so wholesome about watching Trevor flex on Josh with his baking knowledge. I love it.

Some other myths I want them to try:
- cold butter vs room temperature vs melted
- light brown sugar vs dark brown sugar vs white sugar + molasses
- wafers vs rough chopped chocolate bar (I love the difference in size from big to tiny slithers when cut up)
- refrigeration time 30 mins vs 2 hours vs 24 hours
Also browned butter vs regular butter. In culinary school we bulk browned butter because everyone wanted it instead of regular butter. I personally could not taste a difference but I suppose most others did bc of how much browned butter then made. It is an extra step that do not mess with unless someone specifically requests it.
Sounds like they should revisit it!

I'd like them to test the exact proportion of white sugar to brown sugar, if it's like 70/30 or 60/40.
I used melted and raw cane sugar with molasses added recently and was blown away by how thick they turned out!
The cutest thing about this video is the how you can SEE the affection Trevor has for a stand mixer

@@bellagab3 it's during the first test, as Josh describes the ingredients he notes that the chocolate drops are shaped like the Brazilian snack, and the "NH" sound doesn't exist in English, so most people would say "koh-shee-NYAH", but he pronounced it surprisingly well.

If the butter & sugar are mixed first - it's a cookie
If the butter and flour are mixed first - it's a biscuit or scone

Myth Munchers are my favorite episodes of the Mythical Kitcheneers. They just all have a good dynamic and it is fascinating to see people testing out all these food myths to find what really works (as a baker, I appreciate it)
i really am a fan of these matrix tests, with a row and column setup; even if i don't agree with their opinions, it's still interesting to see what happens

I feel slightly disappointed they didn't test the real best ratio: 3 parts brown sugar to 2 parts white sugar.

YES! Thank you! I always do more brown sugar than white, because I do like my cookies chewy, but you NEED white sugar to give it structure and crisp.

I feel weird in that I don't like choc chip cookies so warm the chocolate is melted. To me it should be solid enough to have a firm texture to contrast the soft cookie dough, so the cookies should be close to room temp

While I was pretty much in the same camp as Trevor, chunk is clearly the superior choco "chip" delivery method.

I use 2/3rds brown sugar, & 1/3rd white sugar. I mix it well before I put the butter in. It's the perfect amount.
I think it would be cool if they took one of the staff members or Rhett/Link to do a blind taste test of each cookie.
I like how Trevor is freaking out at Josh eating ranch bread when that's what we'd do in the field during basic training for extra calories because we were always so hungry lol

This episode was great, Trevor dropping knowledge on Josh was awesome. I learned a lot about baking chocolate chip cookies today.
I think this is my favorite Mythical Kitchen series (and I love Mythical Kitchen). Love having all four of you in the episodes; love the interplay and the chemistry you have in pairs and all together; love the food science vibe reminiscent of classic Good Eats; love the sprinkling of Myth Busters. Please keep them coming!
Before even watching the video fully, i agree with Josh that i think creaming butter is a myth. I make a ton of baked goods and cook for my household, and i've always found melted butter got me a chewier, softer cookie, which is what my family and i prefer.
They should've had another one for resting the cookie dough for 24hr vs a couple of hours chilling it in the fridge
Honestly, it’s so cool to see the stark differences in cooking techniques come to life here. Some of the other episodes it’s difficult to see any variation. And, it’s also pretty neat that you can tell the difference in baking knowledge from each person here. Trevor and Nicole having specific pastry knowledge and heavily contrasting the other two is definitely an awesome thing to see as a viewer.
10/10 wanna see more baking vids! It's so cool getting to see the cast make things they enjoy, Trevor looked so happy. 😭😭

I like a combo of chunks and wafers. I think Alvin from Tasty did that or something and I tried it out and I liked it a lot. You get a good texture from the chunk but you get all this chocolate running through from the wafer. 10/10 recommended.
