- The tastiest omelette with cheese you will ever taste, it’s light, fluffy and delicious. Plus, it’s quite simple to make.

A lot of people step back when they hear the word souffle, believing it’s too difficult, time consuming and reserved for restaurants or master chefs. Well, you can relax with this recipe. This souffle is quick and simple to make, and will still yields that light and fluffy souffle texture you’re looking for. Best of all, you can make it in 20 minutes.
You can use any cheese you like, but a blue cheese such as Gorgonzola truly gives you the best tasting omelette. It brings it to a whole new level and well worth it.
If whisking by hand is not your thing, use a machine or any eggbeaters and make sure you whisk to soft peaks.
When making the roux for the mixture, ensure you cook off the flour nicely, at least one minute to avoid any floury taste.
Cheese, butter, eggs, what more is there to say! Enjoy my soufflé omelette with Gorgonzola cheese, or the cheese of your choice. (But use Gorgonzola!)

Made it twice, only change is I use 3 yolks and 3 whites. Works perfectly. Just enough time to tidy up the 15 pots and pans you dirty whilst it is in the oven.

I cook the same style omelet without the roux and the yolks.
After I make a batch of hollandaise for breakfast in my small seaside cafe in south coast of Sydney, I use the leftover egg whites to make that. Instead of blue cheese, I put baked diced sweet potatoes, wilted spinach and freshly grated Parmesan.

Can I ask why do you roux it? Wouldn't it be like a pancake than omelette?
Ground ham and shredded aged Swiss cheese were used in one version of this omelette from an old French cookbook of mine.

Joel, my good Aussie friend, very nice recipe & this is the way my wife likes her omelette. I like mine on the stove top, eggs still wet & just to the point where i can fold them. Gorgonzola is rare in these parts so we use a good quality bleu vein cheese which is close. I know you are a french chef so you probably know of chef Jacque Pepin', he makes some delicious looking omelettes also with great techniques, cheers mate !
Cheers Steve, I don't know much about Jacques Pepin I believe he's more an American French Chef? Yes any good blue cheese will work. Gorgonzola is probably a little stronger.

There is a sharpness from the Gorgonzola cheese that makes everything better. I make a 5 cheese spinach dip and blue cheese is a necessity. I would make this with the addition of chives or green onions (and maybe some cayenne?). Thank you Chef for the inspiring recipe and technique for making an omelette that isn't burnt.

I will try this it looks delish, but I do a similar omelette, separate the white from the yolk of 4 eggs, whisk the whites till stiff, beat the yolks , fold the yolks slowly into the beaten whites with a non metallic utensil, meanwhile have your frying pan hot and pour the egg mixture into the pan, once one side is golden, turn and do the other side, half way through cooking add grated cheese onto half of the omelette, and fold the other half on top of the grated cheese, turn down heat a bit lower till the cheese is melted..... Its quick and delicious,.. the one on here is more luxurious 😋
