The first thing we do when we have bought a piece of meat is to take away the grease (most of the time the butcher has already done it), but there they keep and probably eat the grease - it sounds so unhealthy. And another thing that surprises me is that they always cut the meat in small pieces, a thing we rarely do except if we cook a stew. They do the same with the vegetables, which means more contact with the water since they mostly boil the food. Not very interesting !
