I just altered this recipe to make a strawberry cobbler. Husband said it was "take it to the fair" worthy and the bread part was delicious! I thawed fresh/frozen strawberries (~2 cups) and sweetened with liquid sucralose. (Use your choice of sweetener.) I poured the strawberries into a deep dish pie plate. Next, I mixed the batter as instructed in this video recipe and spooned over the strawberries. After sprinkling the top with brown sugar sweetener AND some cinnamon, I placed 1 stick of butter cubes over the top. I did NOT pour hot water like Victoria did as the thawed strawberries already had enough water. Bake until done. (My oven hugs, so I can't confirm for how long.) I used the allulose/erythritol blend and, as Victoria warns, the allulose browns quickly. Even covered with foil, the center did not get done. So, I'll eat around the edges and rebake. I must say, use your imagination to all the possibilities because this certainly was a delicious dessert!!!
P.S. I can't wait to use Victoria's new Boca Sweet sweetener mix. That will probably solve the issue of dishes not getting completely cooked because of the rapid browning with allulose. Enjoy, ya'll!!

@@naturalexplorer I made this using her flour recipe with oat fiber/almond flour. It turned out well, but seemed too watery while in the oven, so I would use less water next time -- about 1/2 the amount. I also may try baking pecans in the butter in the oven 10 minutes and then add ingredients on top and bake altogether, but w/the lesser amount of water. Hope that helps.

I made this especially for my husband since pecan desserts are his favorite, just like yours are :). It is really delicious! I used the mixture oat fiber/almond flour bc I'm still using the batch I already made. Your flour performed beautifully! It was thrilling to see it easily mix as a dough, rise & bake, and then taste. Hubby definitely approves. I served it with home made keto butter pecan ice cream. One thing I may try differently is baking pecans first maybe 10 minutes in the melted butter, then add the other ingredients, but about 1/2 the water. I would like the pecans to have some crunch. Your thoughts? Either way, I'll definitely be making this again! TY for the recipe!

Macadamia?--- try this - gently melt 1 cup virgin coconut oil to 115 deg with double boiler, add a 4 oz 100% cacao unsweetened baking chocolate bar , heaping tablespoon turmeric powder, teaspoon white pepper, teaspoon cayenne pepper( 75000 hu or hotter preferred) 2 teaspoons ginger powder, , 1/4 teaspoon ground cloves, teaspoon of each nutmeg, allspice, cumin, cardamom, 2 heaping teaspoons of matcha green tea ( mountain rose herbs) optional heaping teaspoon of ground szechuan pepper corns,- drop in pecans or macadamia nuts , dip out with slotted spoon or spider spread out onto parchment and dust heavily with ceylon cinnamon- or use a silicone ice cube tray or candy mold -- or leave out the nut and use as booster bombs for light roast coffee or brewed hot green tea ( I mix both by putting green tea bags under paper filter and just 2 tablespoon light roast coffee per 32 oz distilled water in my bonavita coffee maker)

Also, you have said your flour mix is a one:one replacement for all-purpose flour, so why do you keep mentioning what the weight of the flour is that you used in the recipe? This is very confusing. Should we go by volume OR by weight?
