I don’t know what I did wrong. It was only ok. Mine was too lemony and yet bland. I added a lot more salt and pepper and even some garlic. And mine didn’t turn out as thick. My avocados were perfect - just like yours. The color of mine was much lighter, too. I will attempt his one again because I know how incredibly healthy this soup is. I’m sorry, John. This is my very first (mildly) disappointment. I still love you and your wonderful recipes! ❤
"It's like a green slap across the face!" That made me laugh 🤣 looks very healthy and full of vitamins. I personally would leave out the arugula, it's too spicy for my palate 😝

Instead of (in addition to?) the parmesan crisps, I bet if you pan fried some paneer cubes and mixed them in at the end, it would be delicious. Like an Italian take on saag paneer.
