I had never heard of adding a dollop of Duke’s to mashed potatoes until I was in college (in the ‘70’s) and a girl friend made hers that way. She said she learned it from her grandmother. The mayo makes a subtle, but savory difference.
I hadn't had Dukes in years, moving from the south to the PNW. When I had some (on a french fry I think) I was immediately transported on my Mamaw's house in the 1970s, in her linoleum kitchen with the little fluorescent light over the window, looking out over the corn patch. 2 TBS of Duke's 2TBS heavy cream, whipped together then add 4 eggs and beat for scrambled eggs. A spread of Duke's on the outside of the bread for a Grilled Cheese sandwich, then grill it as you always do.

I don’t usually disagree with someone’s personal taste, but in this case I will. Duke’s is just SO much better that it’s like comparing an NFL team to a high school team. If you need the Hellman’s taste, sprinkle a little sugar into it and thin it out with some milk.
