    I’m a savoury breakfast person, but had porridge today and even threw in some sultanas in your honour!
    Just a note on the polenta, make it thick, pour into an oiled dish to set in the fridge. Then you can slice into fingers/cubes and fry it. Then serve topped with a tomatoey sauce like pasta!

    Recent subscriber and working through your videos from the start. I’m really impressed with your budget shopping and cooking, hopefully it will inspire me to be more creative and save some money.
    The tuber things you had, think they were Jerusalem artichokes rather than yams.
    Polenta is pretty bland in itself. I make it with veg or chicken stock then add lots of cheese and butter! Absolutely delicious. Serve it soft with some sort of ragu or put it in a tin, let it go solid then slice and fry it. It’s so nice like that.

    To make your own coconut milk buy dessicated coconut, soak in warm water, blend until smooth. Put in fridge overnight, oil hardens on top, use the milk. Can make coconut cream with less water. Avoids the metal from the can lining❤

    When I make pizza base or roast veg like potatoes or parsnips I use polenta and a bit of salt by sprinkling a bit on to give it texture and crisp, so maybe give that a try so not as to waste the polenta. I don’t like the taste of it either as the main ingredient. Loving the videos.

    Did have recipies in mind or just wing it. I do like a goat curry and jerk jerk chicken.
    Im sure you probably know but might be cheaper do themed weeks at lidls they recently had italian week and was greek week before. Just seems a way to keep the costs down. Some things are cheaper at international store's but not as easy see what total cost be if on budget especially with loose produce

      That sounds like a great tip! I’ve seen those themed weeks at Lidl. The themed weeks definitely cost me more and then I have an excess of food waste which I am trying to decrease. So I might scrap them x

      @BudgetFoodieUK what about a compromise having themed day or evening. Or a fake away style meal as weekly treat. What works for me really I shopping around doing a few different shops every week as fresh doesn't last long and more i go better chance of reduced items. I live in large city so quite a few different supermarkets near me. Asda/ waitrose and farnfoods are quite far away as is poundland. Have you tried home bargains / heron foods or farnfoods. Maybe try different store each week. As single person larger store with more value range and able to buy loose produce or meat counter can work out cheaper I guess.

    Being Jamaican....this was quite an interesting watch. While none of these meals were actually Jamaican (sorry about that), it was interesting to see your interpretation. Couple of pointers:
    We dont put fruit or plantains in our porridge.😊
    Not sure what bang bang prawns are...a coconut curry shrimp would have been closer.
    There are no leeks in curried goat.
    Jerked chicken isn't fried at all....popping into the oven would have given a better effect.
    These weren't yams....not sure what those were.
    We dont serve whole slabs of saltfish and we would steam some callaloo with the broken saltfish. There is no blending or food processing of herbs unless you are making a sauce we use marinate meat before cooking.
    The eggs with fish confused me completely....I think you had that confused with ackee and saltfish.
    It's a very creative spin on some Jamaican ingredients. None of the meals were Jamaican recipes unfortunately. All in all an interesting watch. Cool that you wanted to try our cuisine.

I'm a new sub, and channel member :) I love watching your content, and you're teaching/shaming me into being less wasteful! lol My name is Gina, and I'm a mixed race British/Jamaican lady of 42, 43 next month from Surrey. Like Simplyrieda, I did find it was amusing to watch your interpretation! If you want ideas to enjoy the cornmeal, I would suggest watching some Jamaican cooking channels here on RUclips to give you some inspiration. For instance, you might enjoy cornbread which is savoury, and can be eaten as side to stews etc xx
