Well I will explain the gentleman he dig the ground facing the sun and it’s very important to create humidity for the manure so it will be perfect for the root to expand and get benefit from juicy manure and humidity
How about cutting the roots while digging the trench
The trench is dug at the end of tree canopy, and as such, the tree roots are very safe.

ooh sorry my friend. Maybe the variety which was grafted had issues. its import to pick scion which you are sure before grafting
