INGREDIENTS for the Berta Jay's
CHICKPEA Chocolate Chip Cookies
----------------------------------------------------- Preheat oven to 350° F
1 can drained chickpeas (15 oz. can)
2 medjool dates - chopped
3 tablespoons maple syrup
¼ cup almond butter (I used smooth)
½ teaspoon each of baking soda and baking powder
pinch of salt (I use Himalayan)
¼ teaspoon ground cinnamon
pinch of ground nutmeg
and finally ½ teaspoon vanilla - I forgot to say it but I did show it ;-)

3 tablespoons chocolate chips (I use the Enjoy brand)
3 tablespoons broken walnuts
1. Drop by "soup" spoon (large spoon from your stainless place setting) onto a parchment-lined baking sheet.
2. Bake for 14 -15 minutes.
3. Remove from oven and let cool to enjoy!

My objective for this channel is to share with others what I have learned over the last 30+ years about living and eating healthier. I share my knowledge with my small circle of friends all the time. I am not a doctor, nor do I hold any type of medical degree, but I believe that my tried experiences may help someone else.
For over 30 years I have used every diet imaginable to lose weight, but I confess that I am now at home using the vegan lifestyle. I want to share what I have learned about eating and enjoying food. And, since I am still learning how to be more consistent with this lifestyle, I have decided to eat more healthily, realizing the weight will come off eventually. Though I have not reached my goal weight, I know that sharing with other people in front of a camera with help me to stay on course.
I have, with the help of my husband of 37 years, raised 3 grown children. I will also share some cooking shortcuts as well as some natural formulas I have used and still use for everyday problems.

Wow! I am so excited to have this recipe. I've made black bean brownies before . They come out a bit more like fudge in my opinion. And I have used white beans to replace the butter/shortening in baking. I love chickpeas! I just cooked of a big batch of chickpeas and put em in my freezer. I will make these cookies for my daughter. Thank you so much for this recipe.

Couldn't wait till Christmas to make these. Used sweetened carob chips as I didn't have chocolate chips, they all loved them so I had them guess what was in them. They couldn't.

I really don't know what to tell you, betty. You could try a blender at a very speed but l can't promise it'll work like a food processor. Try it and see what happens.

CHEWY, Not crunchy. You really get crunchy from oil + sugar, neither one is in this cookie. I am so sorry. Try it though, I think you might like it. 🤔

Perhaps you should ask your doctor,@@heathermcneil2973 because I am not a doctor; perhaps also, you should do some investigating about erythritol and xylitol. These are sweeteners that some people with diabetes have found to be a benefit to them.
Just curious if I can use my Nutribullet to mix everything. It come with a blade that I can us for nuts... thoughts?
I can't honestly say, Barbara, because I have not used a Nutribullet. Is it like using a Vitamixer or a blender? Let me know and then I can better answer your question. Okay? 🤔

I love that there's no sugar! I'm a heart patient and have also cut sugar from my diet. If I don't use parchment paper, do I spray with an oil to keep them from sticking to the pan?

Not sure about that, xiu, because you need something to make the batter hold together. I don't know if this will work but you could use 2 "flax eggs" instead. This will effect the taste and I don't know how because I have never done that but it might be okay. Give it a try and let me know, xiu. ❤️
