I was just thinking that same thing earlier today. When Rach needs to miss posting on her schedule, she at least tells us ahead of time or posts a quick “I won’t be posting this week” to let us know. There’s another YTer I follow who hasn’t been sticking to her schedule at all lately and it’s so disappointing when you look forward to something. My mother-in-law makes that cranberry dip every year for thanksgiving and Christmas. It is so good
Becky from Acrehomestead makes this dip topping and she just pulses the cranberries in the food processor, removes them and then pulses the onions and jalapeños. She then just mixes it all together. So an easier way to make the cranberry topping over the cream cheese
We made it that way and it really turned out perfectly & delicious too!
Also add a little bit of cumin. Amazing

Rachel, if using plastic cutters i find rolling a rolling pin on top of the cutter cuts the pastry very well.

I make that cranberry dip every year, i just rough chop my jalapeño and scallion and throw everything into my food processor, whole cranberries and all. It comes out just fine! Lol
All things cranberry are popular right now in the US and are a popular dish for our thanksgiving, which means we can actually find fresh whole cranberries this time of year. 😀
You can also usually find them frozen
I make the cranberry salsa every year for thanksgiving and I use my food processor for it. I just pulse my cranberries in the food processor, put them in a bowl and then pulse the rest in the food processor together. Then mix all in with the cranberries and follow the rest of the steps.
I use the food processor to make the cranberry dip and it’s perfectly fine. I just use the pulse function and not just turn it on. I’ve been making it for a few years and my family LOVEs it!!

I made it (or a version of it) several years ago and really enjoyed it. But I could definitely taste the sugar cookie mix in mine.

I would put the pastry on top of the pie cutter then use a rolling pin. that way you know for sure when you're through and you can put extra pressure on the vent area with your fingers or the back of a spoon.

My favourite fudge so far is rum raisin fudge. Rum and cream are so good together.
My favourites were the molds for the filled cookies/pastries, and I would also fill them with hearty ingredients like e.g. tarte flambée style or maybe chili cheeseburger style.
My husband recently started making hand pies using apples from our garden. Tasty plus all the wholesome nostalgia feels. So I hit the zoom link as soon as your pies came out ok. GREAT stocking stuffer!! (& I might need the cookie cups to go with my coffee Patron)
maybe you could try the pie things for a hack to make uncrustables!
also i would love to see a video where you and chris show us your favorite drinks to make! as someone who is interested in trying new drinks but doesn’t know where to start i think it would be super fun! you could even just film them whenever you make them over the span of a few weeks or months!
As far as Kiwi Co boxes, my kids absolutely LOVE them! My best friend always gifts these for the holidays (educational and experiential), so we always have a steady supply. Totally worth it!
I always chuckle how different a chef's pinch of salt is so much bigger. My version of a healthy pinch of salt is about 2-3 times as big as Rachel's - salt brings out flavours and sweetness
The cranberry salsa is sooooooo good. I haven't made that recipe, I think I used Mel's Kitchen Cafe, and I got sooo many compliments and it was gone! 10/10 recommend it if you need an appetizer for anything!

Raw cranberries are often made into a cranberry relish for Thanksgiving instead of a cranberry sauce. It’s usually made by grinding up in a food processor cranberries, a whole orange, and sometimes sugar.
With the cranberry salsa, put it in the food processor and mince it down into very small pieces instead of leaving it in huge chunks I make it and all the recipes that I see for it have you processing it down so you're not getting a big, bitter chunk of cranberry. The other ingredients will mix in and distribute better that way. Just make sure you do short pulses so it minces it and doesn't go too far and you end up with cranberry puree

I make the cranberry dip every year in the blender with lime instead of lemon and a handful of cilantro and its AMAZING!!! TRY IT!!!!

For the fudge and smoothing it on top.... lay a piece of parchment paper on top while it's moldable and smooth it out. Leave the paper on top till it dries.

We make that cranberry dip all Fall and Winter. From the time the fresh cranberries show up in the store till they are gone (and our stockpile has bren gone through, lol). I used a blender to ruff chop everything or use one of those choppers from a few videos ago (have 1 they are awesome for canning). We also skip the straining. That juice is too good to throw put
Curious if the juice is worth drinking on its own, if you strain it out to make the dip less wet but don't want to pitch it. Cranberry juice is a pretty normal thing to drink, and it looks like most of the juice is from the cranberries, but I wonder how much jalapeño and onion flavor gets into it. Then again, if the finished product is as tasty as it sounds, the juice probably is no exception.
@@blaireshoe8738 probably not to drink (very syrupy and you do get bits of onion, pepper and cilantro (if you use it) in there) but drizzled on some cream cheese and a cracker, yum!
We have a split in the family on cream cheese. So we don't actually serve the dip over it but rather to the side of the cc and use a slotted spoon. Solves the wetness when serving ( and everyone can make their own choice on the cc) but then you get to have the juice for midnight snacking

That pastry is undercooked but cute! Going to make the dip for sure though!
Try using a tip of a knife to remove those intricate pieces of the dough that are for venting the pie.
I’m not sure if you have it there but in the US we have refrigerated pie dough ( in that same section we have refrigerated tortilla shells that are uncooked, highly recommend trying if you have those. It will up your burrito game I can’t even express to you how much) it’s usually by the cheese/ sour cream and it’s pretty good pie crust dough to be honest that could be an alternate to the pastry flake dough but also they have cans of pie filling which those two items would make a truer mini pie whereas I think yours is quite delightful making a pastry, that’s actually more up my alley but I thought I would give you another idea to do. I really want these to try, they look sooo festive. I do believe I’m going to try most of these recipes because that sugar cookie fudge is an awesome idea too. Great series!

The one that appealed to me the most was the teeny pie molds. 2nd was the white chocolate/sugar cookie fudge. What about sprinkles & rice krispies (or a knockoff version) in that? Or nuts or whatevs appeals, but I want to try some variations. We make what the recipe called 'christmas crack' because it's really addictive, and it's similar in that you melt chocolate chips (and peanut butter chips) and stir in nuts, then let it dry in little spoon dollops, but I imagine you could pour it into molds, too.

Another good one video ❤ I don’t like fudge that much, especially with white chocolate ( because it’s already sweet) so I will add less condensed milk and ad some rice crispy into it which maybe some nuts or dry fruits or coconut flakes 😁 and make it thinner 😂

I cut fudge the same size as baklava. It is very rich so one large or two small bites is usually plenty.

You can 100% chop cranberries in the food processor. You just have to pulse it a few times, but make sure to let the blade fully stop between each pulse.

Godiva chocolate liqueur, a white or a black Russian, a grasshopper, all those drinks would be good as shots in the cookie cups.
If you don’t feel like cooking, Costco sells a fantastic cream cheese-based cranberry and jalapeño dip that I definitely recommend because it’s delicious
The juice that you drain from the cranberry jalapeño dip mix , I think would be a great mixer for maybe some kind of tequila cocktail , or some other clear spirit? Christopher??
