Regarding Kolkata biryani, I heard from the family of Wajid Ali that Alu was added to the biryani as it was very rear at that time and more expensive than meat. Alu used to be imported from England . But my personal choice will always be Awadhi biryani

I don't agree actually potato had came with Britishers right and potatoes at time was expensive infact meat was cheaper because normal public is used to farm poultry so normal people was also started making biryani so to feel and be royal wajid ali Shah cook started adding potatoes in biryani as potato was new to India and expensive.

From Lucknow to Kolkata food is big bakwas 😮😮😮, If u want to try Mutton, Chicken of Fish items come my house at Surat City Gujarat, u will forget other places 😅😅😅
I can say within 2-3 years it will be closed due to very unhygienic, bad atmosphere also no AC in summer also
