Harder squashes can be used as karela is very fibrous. Try out winter squashes and be mindful of how the taste changes compared to the bitterness of bitter gourd.

I found the kerala prep to be unusual and surprising ... first they peeled off the exterior (the most flavorful and nutritious part) and fed it to a cow. Then they chopped up the kerala whole (without removing the bitter pith and seeds) and then braised and fried it. Personally, I leave the dark green rind ON and instead discard the white pith and seeds.
