Oh man that looked GOOD! Nice Job Man. I'm hoping that my TITAN will come soon - maybe end of Oct or Beginning of November. Titan is backordered. It will be colder, but I don't care. Can't wait to cook something on it - chicken, pork, steak, burgers, etc. The other day I ask my wife to look for my wood splitter - you know the kind you tap into a log and then hit with a sledgehammer, but your hydraulic wood splitter looks "boss". I remember splitting log using that tool and it's harder than with your new tool. I'm going see how things goes when I get my Titan. If I think I'm going to cook more things over a wood fire - cooking over wood always intrigued me, but too much money until this attachment - I may have to tell my wife, "honey, we need a hydraulic wood splitter." If I can be half the grill master that you are, she will insist that I get one because the food will just taste so "damn" good when cooked over wood. BTW, you are right, I love my Hunsaker rib rack (thank you again for your video bc I was looking at both rib hangers for the WSM and jumped on the Hunsaker after seeing your rib video) and I think I will love this accessory too. Right now, I only have the WSM so I will be using that only. Excellent video. You should make a book someday. Really enjoy your style of cooking. God Bless!

A cool trick is to hang your tri tip (or pecanha I'm guessing) in the WSM (Hunsaker ring easily fits 12), then pull the WSM body off and throw the Titan Santa Maria grill on the base with a few splits, sear in couple batches and rest. I'm doing tri tip this way for ~50 in a week. A single 22" WSM is pretty damn versatile!

Fry the tortillas in the rendered fat from the piranha trimmings. You paid for the fat so why not use it. Also, does that Santa Maria attachment fit on the base of your 22” WSM?
Yep the Santa Maria Attachment fits the base and the top of the 22 WSM. I like it at the top better than the base. As for Picanha fat........ never thought to do that! 😳 however, is there anything better than BACON FAT!!! 🥓😋😜
Great question! 👍 They're definitely different. Low & slow usually is more subtle in smoke flavor due to the extremely long cook time. There's a thin line between smokey flavor and over smoked. With live fire your usually "grilling" where typically the protein cooks way faster so you want a stronger smoke to try to kiss the meat. I use red-oak and the flavors I pick up from red-oak are strong and sweet. Hard to describe. Definitely different from a low & slow. However they are both great. If you've never tried live fire,, santa maria style cooking, I'd highly recommend. At the end of the day it just adds one more technique to your bbq game!
