This is EXACTLY what I was looking for. Such an unfortunate bug in the system with the current/previous page number, but thankfully now I know the solution! Thank you so much for figuring this out, you’re my hero!
Very helpful, but it's ridiculous that one has to fudge this stuff to achieve a pretty common task (i.e. not counting the cover as a page). You'd think they'd allow a "page numbering" system to be divorced from the actual page count. I'm sure other page layout packages allowed for this....perhaps PageMaker/Ventura or something ancient let you set the starting page number (e.g. "start at page 0") without having to divvy up a document into multiple sections or mess around to stop left/right page re-ordering
I’m about ready to manually renumber a 260 page book. I’m new to InDesign and everything was going well until I found out they want the pages before a new chapter with no writing on it not to be included in the page numbering. I thought easy, I’ll just go to those pages and delete the page numbers and the rest of the pages will adjust. Wrong. Even when I try to apply a “none” master page to it and number is gone the remainder of the pages do not change. I don’t know anyone personally that knows InDesign, just trying to learn from videos etc. Any help would be greatly appreciated.

If you're using an InDesign Book to compile your publication then page numbering can be controlled the way that you are looking for from what I can tell from your description.
