A Nice Way to Cook Zucchini

- If you grow zucchini - then you probably have too much of it! I'm always searching to new ways to use it up, and this year I found a great one! In this video, I brine my zucchini for 30 minutes before sauteing it. Brining reduces the moisture content, and changes the texture of the zucchini so it does not turn to mush when sauteing. Prepared in this way, it can then be used to make a very simple side dish that can go with any meal.

This is great! The zucchini abundance reminds me of this "annual Sneak Some Zucchini Onto Your Neighbors Porch Day". We found what looked like a dark green pumpkin on the doorstep one day last summer, and it turned out it was a huge zucchini, from our neighbour celebrating this day that we didn't know was a thing 😆
Awesome. I'm always overwhelmed with zucchini every season and I don't even grow them. Everyone that does are always giving away their surplus. I'll be trying this recipe in just a few hours.
Awesome !! I've never done it quite that way but have fried it and mixed it up with angle hair pasta. Also grilled and use it in a veggie stew with potatoes, beans caramelized onions and some peas.

Hi Greg ! I would go one step further and pour tomato sauce in it and let it cook a bit further and add it to the pasta. The best way I have found to preserve extra zucchini is to grate it in the largest grater size and freeze it in freezer bags. You can use that in soups or pasta during winter and even in zucchini bread. I had so much zucchini last year that I used it all winter long prepared that way. This year I only got one little zucchini. 🙁cheers!
When I worked as chef we had to make gallons of cole slaw,we always would sit the shreded cabbage in the cooler with lots of salt before we made the slaw.Almost a half of gallon came out in water.
I love me some fried chicken, french fries and cole slaw!
A salad spinner might work well to drain it.

Great recipe... I cheat and put it in the dehydrator for a few hours... less salt that way... have you tried “magic pineapple” with your zucchini? First year I’ve made it and it’s so darn good!!!

Can never have enough zucchini recipes. Had two vines that grew from my compost pile and I let em go. Now just like last year I got more than I can use.

Oh my Zucchini got too salty, ouch. Had about the same portion of Zucchini. Probably I took more than that table spoon and was not patient enough to wait until the water was sufficiently soaked out of it (20 min). Will give it another try soon.
Massaging and waiting are key.
How about brining and then grilling it instead? My wife and I love grilled zucchini (and yellow sqaush). I think I'll experiment and see what happens.

Why kosher salt? What makes it kosher?
Kosher salt is usually coarse and is not iodized. You don't need kosher salt for this recipe - I just happened to have it because I use it for pickling.
Maritime Gardening Thanks. So often I see cooks/chefs saying to use kosher salt or pink salt and I don’t know what difference it makes. Now, _black_ salt definitely has a specific taste to it.
Looks good. Do you always let your zucchini grow that big? I pick mine smaller so I can use them faster and they don't have as many seeds.
I usually pick it at about half that size.
thought I had about 3x as much zucchini so added 3 T of salt...I used sea salt......way, way too salty even for me, a salt addict....
You have to squeeze the water out really well to get the saltiness down - but yes, 3 tbsp seems like a bit too much!
I bought an $11 cleaver years ago when I worked at a hotel. The chef there told me that was the reason that he could continue to use a knife after developing tendinitis. My wrist was beginning to feel the brunt of chopping 100's of lbs of veggies every day and he was right. I still use it at home, today.
Do you ever make zucchini bread? We love making this and sharing loaves of it with others. My wife and I love to share what God has allowed us to grow and make and share with others to hopefully encourage them. How about you?
I make that too - but I'd be 300 lbs if I made it as often as I make this dish :)
