Curried Buttercup Squash Soup

  • Ingredients:
    1 buttercup squash
    1 tbsp butter
    1 medium onion, diced
    1-2 cloves garlic, sliced
    1/4" piece of ginger, minced
    2 cups chicken broth
    1 tsp cumin
    1/2 tsp turmeric
    1/2 tsp paprika
    1/4 tsp ground cardamom
    1/2 tsp dried oregano
    1/2 tsp salt, or to taste
    1 cup heavy cream
    Freshly ground pepper
    Directions:
    1-Melt butter in a large saucepan over medium heat.
    2-Sauté the diced onion until soft and translucent, about 10 minutes.
    3-Add the garlic and ginger to the pan, and cook for an additional 2-3 minutes.
    4-Remove half of the onion mixture from the pan and set it aside.
    5-Add the mashed squash to the pot and stir in the chicken broth.
    6-Using an immersion blender, blend the soup until smooth and creamy.
    7-Whisk in the cumin, turmeric, paprika, cardamom, oregano, and salt.
    8-Stir the reserved onion mixture back into the pot and simmer the soup for 5-10 minutes.
    9-Stir in the heavy cream and bring the soup just to a boil, then remove it from the heat.
    10-Check the seasoning and add more salt if necessary.
    11-Sprinkle freshly ground pepper on top and serve.
