I am curious how sections of the walls of the snow canyon do not suddenly collapse killing tourists and trapping vehicles?

Most of the snow is compacted and feels more like ice. This greatly reduces the risk of landslides. Indeed, I found no information about these snow walls ever collapsing. But of course, there are always risks, and this applies to any natural attraction.
