Been watching a lot of your videos the last week to get insight on how to upgrade from my kettle grill. With that i pulled the trigger on at Big J 3 yesterday! Amazon had it for $2700! With the savings I think I’ll get the Joetisserie! Thanks for all your videos!
The plastic coat-hanger hack to remove the toilet-paper shims resulted in a nasty outcome. The hanger snapped and a large section of plastic was stuck on the inside. Ugh! This piece had to be removed. Restart! The second-time the toilet-paper was removed using needle nose pliers. Worked great. Thanks Smoking Dad for being my go-to Kamado Joe resource for years.
I think you have figured out a lot of important improvements based on the most important parameter and that is taste. Being an Electrical Engineer, I would like to understand the scientific reasons behind why it works, but tastes is what counts. Thanks for showing us how easy it was to assemble you new grill and that is much easier the my other colored egg. I would love to have storage under my egg too. Being an engineer, I wouldn't trust a friction fit between a piece of metal band and ceramic to lift your Kamado Joe. Can't wait to hear about the testing later this year.
Yes; a lot has changed in 4 years. I added a KJ after watching your channel a few month; 4 years ago. And I thought I never would. Still use my Webbers as well. (WSM, portable for the RV, Natural gas grill for back deck). I've learned a great deal and thank you for your guidance..
I use my Shop-Vac all the time to clean out my Vevor 24 inch kamado. It is very similar to the green egg but also has a lot of nice features from the joe like an airlift hinge and the multi-tier cooking system. The key to using a Shop-Vac is just to get a HEPA filter; they sell them at most home stores for you so when you are vacuuming up concrete dust or other dangerous particulates.
James, I’ve been watching videos about which smoker to get after my 2nd pellet grill smoker bit the dust. After reviewing every type of smoker for a few months on line - and talking with fellow smokers - I decided on a Kamado style. Fortunately, I ran across your videos. Your head-to-head brisket battle with the BGE pretty much sold me on the Kamado Joe. Then I ran across the Blaze. Having something with a full “forever” warranty on all parts was attractive. But your videos won be over. I got the KJC 3. From your help with unboxing to the beginner to the more advanced, there is no telling how many mishaps you have prevented me from making. Don’t get me wrong, even with your help there is still a learning curve…but it is progressing very quickly. I agree with comments by my new friends on your videos - KJ owes you big time. Thanks for the guidance!!!!!

I have a big-joe in a cabinet with granite top, love it with one exception my joe doesn't get hot enough no matter how much charcoal i put in it. Problem is airflow. My solution was to install a variable speed computer fan in the door pointed at the air flow door. Worked perfectly!
I bought my big green egg recently and the bands are installed already. All you need to screw in is the hinge mechanism and the front handle. Pretty easy overall.

I have had my BJ3 apart many, many times and cannot, no matter how hard I try, get the bands aligned so there isn't a problem with the latch. Like ever. (The bands have been replaced too.) I've had to settle with literally lifting the latch itself a fit to get it to lock. Likewise the lid always sags down a bit after opening no matter how much I adjust the hinge bolt. I mean we live in an era of manufacturing precision that should mean these kinds of things just would not be an issue. It's called a threaded bushing KJ, look it up! It's also called welding-the-bolts-on-the-rings so they don't strip. (Oh ya, the guys who put my Joe together on delivery did a bang up job on 4 or 5 of the ring holes which have these truly awful little ridges which are supposed to interlock with the bolt heads. The powder coated paint used the rings does a nice job of filling in these ridges so the bite on the bolts is negated 25 to 40% - did I mention the stripping problem?!) The BGE is even worse which is why I didn't go for one of those either. Don't get me wrong, the cooking results I've gotten from the Joe have been spectacular, based in no small part to James' amazing channel here, but having owned a BJ3, for coming on 3 years now, I don't think I'd buy one again.
Very helpful videos. Thank you. Curious about the black counter surface in your barbecue area. Does the Kamado (just bought a Konnected) not throw off much surface heat or is that a particularly heat resistant surface?
James, Use the D&C ring to set the heat deflectors on to the charcoal basket tabs. They will fit on the bottom ring and you can lower them down on to the tabs.
Thank you for the video. I just assembled mine and those legs did not completely touch the edge of the barbeque and they're almost on a angle, depending on which direction you roll it. I can't figure out why. Every screw is tightened down with it proper washer.
So happy for you to get a new kamado. They should be sending you one once a year. Such a great ambassador for an amazing grill. You mentioned I can take out the lower grill on the bottom. I’m going to try that. I have trouble with adding wood to the bottom as I don’t get hot coals like you do on the bottom. Thanks for the tip. I bought the basket immediately as per your tips.
I just set up a new Big Joe III - your video was invaluable. Thank you! One exception to your video - my slow roller is labelled as ok to use up to 500F - maybe older stock ? Happy to have the higher rating although I am sure it is the same slo roller as the ones labeled for 300F
I am in the same situation, I just received the Big Joe III with the 500F Slow Roller. I am wondering if Kamado downgraded the specs of the more recent version, and if it is really safe to use my Slow Roller up to 500F
@@mattiamarelli437 I suspect everything is the same between last years and this years slow roller except the label. They probably reduced the temp rating due to warranty claims. And if you don’t exceed 500 I expect it will be fine …
Hey James getting ready to purchased my first Kamado joe big joe series. I’m getting the cart model for now as I will build it into my outdoor kitchen and entertainment area. I wanted to know if there any must I should purchase with my big Joe. I’m getting the dojo for pizza and the rotisserie Joe half Moon soapstone and the grates for fish and vegetables. is there anything else you recommend look forward to hearing from you?

I just noticed my Slow Roller indicates 500F, I might have received the "older" configuration. Do you still recommend keeping it, or should I replace it with the newer configuration? Not sure if Kamado downgraded the Slow Roller specs and the older one was really "stronger" to support higher temperature. Are there any other improvements besides the stiffer firebox ring? Thanks a lot again!
congrats on your new grill, the manual says 300 but the product says 500f so i am sure you are fine for warranty if the product has 500 stamped on it but just be sure to stay well below the max allowed temps

Smoking Dad BBq I could do with some advice I have purchased the Classic 3 which arrived today and I noticed it has a lot of crazing, is this normal or should I return and get a replacement. I've had the Joe Junior for a couple of years and never noticed any crazing on it. Thanks in advance.
perfect timing on this video. im assembling a "frankenjoe" big joe that ive slowly pieced together over the last year. scored a free base and free dome, bought some used gear, on sale new gear, and new parts gear from kj. assembling everything from scratch. any other links to raw assembly of kj cooker is greatly appreciated. want to make sure i get the bands and hinge assembly correct.
When I put my BJ3 together (2+ years ago), I noticed that all the holes in the firebox “petals” had waste in them blocking maybe 10% - 15% of the hole. I contacted KJ and they said it is normal. I didn’t see this on yours. I noticed now that when you (James) say to set the lower draft at 1 finger, it will take 2 fingers for me. Is this normal? Should I try to clean the holes? How? Thanks for any ideas.
I’m about to put in a warranty claim on mine - every time I remove the basket my fire ring pops off and I need to spend time re-inserting the ceramics…. It’s seriously distorted. Only had it 6 months and for an expensive grill it’s a PiA and really increases time to get it going… Hopefully can get the stiffer new ring!
@@SmokingDadBBQ thanks. It doesn’t seem to want to stay down. It’s been last 3-4 times now it’s popped off every time I’ve cleaned the basket/ash. Had to completely reset the ring and ceramics. Will give it a couple more goes before I go warranty claim in case it’s something I’m doing.
Just bought a new BJ 3. On the slowroller it was printed max temp 260c/500f. But the ring on top of the firebox was of solid steel. Have KJ gone back to the original slowroller??
Hello. Love the channel! I just purchased an Auto Kamado and I can't seem to find an answer to what "ACT." means next to the temp display. I have looked all through the manual as well as online. Do you happen to know?
it does not work with the can. the can replaces everything. the stock system is better than most any kamado's stock system i have tested so by all means feel free to try it first. i for one just don't like the build up of ash that is wedged behind the wings after a few months requiring me to take it apart to get it out. the basket holds about 4x more ash before airflow becomes a problem and burns wood well so i like it even if the OEM system is easier with the slide in and out tray
@ ok, thanks for the info. Lastly, before I order the can I have a few questions . I have the classic 2….I remember seeing somewhere that the kick ash can…the 9.7…still had 1/2” gap when installed, do you know if this is indeed true? And regarding the 14” drip pan with the small nubs, will it fit in my classic 2 with slow roller?
Hi James, been following for a few years now and your channel convinced me to buy my classic 3. its been a great piece of kit to own and use. Could you just clarify, with the slow roller, does it mean the new temperature range only applies to post 2023 models, or all slow rollers. Had mine September 2022. First cook was your spatchcock chicken, after many cooks, still a favourite. Thanks, Chris, England
I’d be speculating. Based on Facebook groups it seems people weren’t aware there was a limit and did temps like 700 and melted them so perhaps it’s just a precaution to make people more aware of the limitations vs any material change
They are pretty comparable. The big Joe gives you 50 more square inches and that new primo xxl has 50 more than than that. The rack system and clearance of the big Joe is very handy. I have a 400 but haven’t don’t enough with it to suggest a clear reason to switch from one to another performance wise unless you were starting fresh and needed to pick between them
Hi James. I have been watching your Kamado Joe videos for a few months. I just received my Big Joe III yesterday and this video was GREAT! One of my fire box pieces has a very small hairline crack. Should I be concerned or is this ok? Should I reach out to Kamado Joe support?
If you haven’t already, simply take a picture and reach out to KJ warranty support - they’ll send you a new one without questions. A hairline crack won’t cause issues but best to still do the warranty replacement and keep it should it ever get worse
@@SmokingDadBBQ Seems you did your homework on the wsm if you've got some hunsaker mods to play with. I don't own one (yet) but I have been looking to pick up one for hanging food and having that elevation over the coals for direct cooking at lower heat.
I got a new Big Joe Series 1 in February after much lurking on your channel. I love mine. I used it to make pizzas yesterday running ~700°F for only a few minutes, and today I'm doing a plate of Beef Short Ribs running ~275°F for several hours. I mean, how versatile is that?! Also big shout out to Kick Ash cans for amazing customer service. I emailed them asking if they had any scratch n' dent cans, and he wrote me back and said he had a new batch to inspect and would let me know. A day or two later he sent me a photo of one with a dent and offered it to me for $10 off! I am so impressed; they have a customer for life in me.
Yes I took it too the lab last week and they are starting a whole bunch of more scientific tests to help us understand more about the variables inside our grills

the type of charcoal and amount of charcoal can play a role in that as will burning a hotter fire

Hope so. Make sure it’s seated all the way down. The tension of the bricks should hold even a warped ring

I think the stamping doesn’t match the owners manual so I assume the manual online is the latest recommendation

@ yes it’s the 9.7 one listed on the classic 2 sort by grill page
@ I don’t have a classic anymore to confirm but they are low profile so I am 99% sure it fits

I think they lowered it because people ignored the warning and went higher and are melting them based on photos so I am sure you’re fine

When you burn in your kamado for the first time, can you already cook something on it?
Yes. It’s just preference I give it some time to clear out any packing materials or oils

yes, series 3 does
This is the one I am looking to get. With everything removed from the inside of big Joe what would you say is approximate weight?
It’s likely 260 ish. Easy for 2 guys to carry short distances or lift into a base

The sloroller is part of the test … and I like showing methods on older models since that’s what most people have
I Am A Primo XL400, But i am thinking of getting a big Joe s1 Is there any advice you could give me to look out for?
They are pretty comparable. The big Joe gives you 50 more square inches and that new primo xxl has 50 more than than that.
The rack system and clearance of the big Joe is very handy. I have a 400 but haven’t don’t enough with it to suggest a clear reason to switch from one to another performance wise unless you were starting fresh and needed to pick between them

Hi James. I have been watching your Kamado Joe videos for a few months. I just received my Big Joe III yesterday and this video was GREAT! One of my fire box pieces has a very small hairline crack. Should I be concerned or is this ok? Should I reach out to Kamado Joe support?
If you haven’t already, simply take a picture and reach out to KJ warranty support - they’ll send you a new one without questions. A hairline crack won’t cause issues but best to still do the warranty replacement and keep it should it ever get worse

the WSM first video is this week, i have it in another with mods from Hunsaker. the Summit is in a 4 way Kamado test along with its own review video
@@SmokingDadBBQ Seems you did your homework on the wsm if you've got some hunsaker mods to play with. I don't own one (yet) but I have been looking to pick up one for hanging food and having that elevation over the coals for direct cooking at lower heat.
I got a new Big Joe Series 1 in February after much lurking on your channel. I love mine. I used it to make pizzas yesterday running ~700°F for only a few minutes, and today I'm doing a plate of Beef Short Ribs running ~275°F for several hours. I mean, how versatile is that?!
Also big shout out to Kick Ash cans for amazing customer service. I emailed them asking if they had any scratch n' dent cans, and he wrote me back and said he had a new batch to inspect and would let me know. A day or two later he sent me a photo of one with a dent and offered it to me for $10 off! I am so impressed; they have a customer for life in me.
