you gotta double de-clutch these car either the gearbox' synchros are worn out or it doesn't have synchros at all.. either way you gotta double de-clutch it or wait until the rpm's drop to the appropriate rpm before you shift gears to avoid grinding
you just got to know... what rpm it is.. try shifting a 5 speed Manual car from 1st to 3rd to 5th lets say it's a diesel that you rev up to 3500rpm before you shift since the gear ratios are wide, you gotta wait until it drops to something like 1500 rpm before you shift so that the engine and gearbox would have time to synchronize it's like matching the rpm of the engine to the rpm of the gearbox so you dont grind the gearbox by forcing it to synchronize
