- For the 'Show Us Your Stew' Challenge I'm putting together a chicken & brisket Brunswick style stew in a vintage #5 Potjie Pot.

Thanks for checking this out Chris! I did mention the potjie pot in the description, but I didn't talk about the cooker. I'm using my Big Easy grill with a home-brew adapter to hold that pot. It needs a little more refining, but it does the job!

I've been looking for a cauldron like that for a while now, could you steer me in the right direction? Can't wait to try this recipe.
For vintage pots with a decent price tag check out flea markets & yard sales. They (especially with matching lid) are not a common piece to find though, you'll need luck or patience. I found this one at a flea market in Mont Eagle TN, but until that day had never seen an older piece with the correct lid. They can sometimes be found on eBay or one of the Facebook cast iron groups. The problem there is the price to ship them can be very high. New Potjie pots can be found on Amazon with free shipping, but don't appear to be the same quality as the old ones. I can't honestly speak for the new ones, as I've never used one or even seen one in person. Thanks for checking it out!

This looks like mouthwatering time. I have never done this but I am going. Question please - have you ever cooked "potjie" in you "potjie" meaning not a stew but a layered system of veggies on meat from hard to soft. It is not a stew because you never stir after you marry the meat, onions and garlic. That is when the art starts and when you stop stirring. Try is some time it is the traditional style of "potjie" in South Africa and it is most beautiful experience in itself. 💖
I have indeed. So far I've only made oxtail potjie, but it was so good I've made it several times since. I agree, it is a wonderful experience when the lid finally comes off & it is time to dip a spoon down into the pot. Each time I've made it I served it over rice and it is always a big hit!

@@oldchevy4x4 My dear fellow I absolutely adore "The Outdoor Kitchen" and what it offers. There is just something to about cooking on an open fire and I fully agree with you on opening the lid and magic happened. Interesting thing also is that true "potjiemakers" consider Oxtail the best ever option for "potjies". Have you ever tried it with "Domboy" which is another name for dumplings under the lid?
I have not tried it that way, however I just did a quiick Google search and it is definitely something I will try out!

Thank you my friend! I did not prepare a traditional potjiekos however I love using this potjie pot for soups, stews & chili. I have some oxtail in my freezer as well, I know it will cook beautifully in this pot!

Brunswick Style. Not traditional Brunswick, but it was pretty darned good!
@@oldchevy4x4 I’ve got an amazing traditional Brunswick Stew recipe that I’d be willing to share with you. Technically it’s supposed to have rabbit in it but you can’t tell if it’s in it or not. Being from Georgia I’d like to see you try and introduce your countryman to the real thing. I can give you some backstory on where it came from too if you’re interested.

This was the 1st time I made this & it was an instant hit. I might let it evolve a little, but the basic recipe is very good.
I haven't made chicken & sausage since before Christmas... I believe it's due time!

I will be making this again, it's a great & filling meal. I'm sure you could make it in a crock pot, although you might want to saute the onions & such in a frying pan first then mix them in with the other ingredients up to the chicken. Drop in the chicken, cook on high for 2 1/2 - 3 hours or so until you can shred the chicken up. Add the rest & put it on low for a while to bring it all together. I bet it would work perfect!
