  • I will try the plastic milk experiment in this episode of TinkerTime. By adding a bit of vinegar to hot milk, you get curds that can be molded into shapes, which will then become as hard as plastic when the moist has evaporated
Milk is full of different proteins, and one of the major ones is casein. When you add vinegar, which contains acetic acid, it changes the environment of the milk from neutral to acidic. The acid in the vinegar causes the casein proteins, which are normally suspended in the milk in a loose and random arrangement, to unfold and reorganize. This change makes the casein molecules clump together
As more casein proteins bond together, they form solid masses or curds. These are the white, chunky bits that you see. The rest of the milk, which consists of water, fats, and other proteins, remains in the liquid form called whey. As more and more water leaves the curds, the proteins (mainly casein) in the milk start bonding closely with each other. This bonding creates a firm and solid structure, making the material harder. The drying process can take a few days, especially if the curds are thick. The end result is a hard, durable material that feels somewhat like plastic. This happens because as the water goes away, the protein molecules have less space to move around and end up sticking tightly together, forming a solid mass
