The way to Dortmund is crossing over the bridge. The ICE trains that crossing the Rhein are going to the high speed line to Frankfurt Airport station or the line to Düsseldorf, Duisburg and Dortmund. At 19:15 the ICE that’s coming in, comes from the line to Aachen Hbf and the line called the Rheinstrecke.

And nice to know: all trains coming from Dortmund or Düsseldorf or anywhere else are turning at Köln Hbf.

I've never been to Cologne. Frankfurt, Mainz, Stuttgart and Munich are the German cities I've been to multiple times and know well.

How do you accurately identify each train? I'm impressed.

The difference between the ICE1 and the ICE2 is that the ICE2 (Secind ICE Generation) is shorter then the first. So it can be coupled with another ICE2 to make it almost as long as the ICE1. The ICE has 2 Electric Engin wagons, one in the front and one in the Bag as the ICE2 only has one Engine carrige and 1 that can carry Passengers. The "Bordbistro" or "Boardrestaurant" on the ICE is a bit higher then the passenger carrys (Dont know why) and on the ICE2 is the same size as the passenger carries. I hoped it helped a bit. Both the ICE1 and 2 have a maximum speed of 250 Km/h.

Those swiss carriges might have been part of an earlier pair of EuroCity services coming from Basel or Chur, and then just a regular DB InterCity service back to Karlsruhe.
Regional rail services in Germany are divided into faster Regional-Express (RE) and slower Regionalbahn (RB) services. The routes often carry names, such as the Maas-Wupper-Express from Venlo to Bielefeld and the Rheni-Hellweg-Express between Düsseldorf and Kassel.
As far as I know, Siemens makes Desiro, Velaro and now Mireo multiple units in Krefeld, Vectron locomotives in Kiel, all Viaggio carriges (LF, Twin, Classic and Comfort) in Münich I think, and trams in Vienna. The Viaggio Comfort carriges are what form the Railjet sets.
Finally a bit of rolling stick trivia. National Express have ordered new trains for the Nurenberg S-Bahn, from Škoda. But this new class of trains didn't materialize.

Easy way to tell the ICE 1 and ICE 2 apart is that the ICE 1 is a full length 12-14 car set with locos on both ends, whilst the ICE 2 only has one loco, 6 coaches and a driving trailer. Another way is the location of the headlights, on ICE 1 they sit directly on top of the red stripe, whilst on ICE 2 they sit further up above the coupling hatch

Although the first one of these might change soon, as there are plans to maybe convert ICE 2 sets into top-and-tailed units (it sounds like those will generally be shorter). Another easily noticeable difference is to do with the restaurant coach - the ICE 1 has a "hump" which the ICE 2 lacks.

What's the ICE with blue stripe?

It's actually funny that DB can confuse you. The simple answer to your amazement is the obvious one: Köln Hbf can be approached from either direction. This is true at least for service lines running north-south through the town.
