Yellow Split Peas Fritters

- The yellow split peas fritters are a popular street food snack originating from Mauritius called “gateaux piment”. They are served on their own or with bread and butter!
Recipe: Yellow Split Peas Fritters
Ingredients:
150g (3⁄4 cup) of yellow split peas
⅓ of a medium red onion, finely chopped
2 spring onions/green onions, chopped
15g or a handful of coriander, chopped
10 dried curry leaves
1 teaspoon of grated garlic
½ teaspoon of baking powder
1 teaspoon of salt
1 green chilli (optional), chopped
½ teaspoon of cumin
Light olive oil for frying
Instructions:
1. Soak the yellow split peas in 1.5 litres (50.7 fl oz) of water overnight.
2. The next day, drain and rinse the peas. Add the peas to a food processor and pulse until broken down, leaving some texture. Transfer to a large bowl.
3. To the peas, add onion, spring onion, coriander, chilli, curry leaves (crumbled), garlic, cumin, salt and baking powder. Mix until combined. Quickly pulse the mixture in a food processor, still leaving some texture. The mixture should not be smooth (see texture in video). Transfer to a bowl.
4. On high heat, heat some light olive oil. Once the oil is hot, reduce heat to medium-high. Make small balls, 1 to 1 ½ tablespoons each. Fry for 4 to 5 minutes, flipping over halfway.
5. Place the fritters on paper towel to remove excess oil.
6. Serve and enjoy!
Notes/Tips:
The fritters will last in the fridge in an airtight container for up to 4 days. They are best served warm.
Any vegetable oil can be used for frying.
Serve the fritters on their own or with bread and butter.
