Idea for all you freeze drying people. I’m retired military. My former unit is deploying (again). While they are gone I’m having the families prepare home made meals for their troop. Then I will freeze dry and package the meal. The family can send their loved ones a home cooked meal to enjoy. Nothing like a taste of home and sure as hell beats military food.
What a great idea! My FD arrives soon and I love the idea of using it to give back to those who give so much to our country. I will be using this idea in the coming year!
I just did 2 1/2 lbs of that Taffy. A bit hard so I microwaved about 12 of them for 10 seconds. Pulled the ends, then used kitchen shears to cut in half. Most of them fell right out of the paper as I cut them. 40 on a tray, looked nearly perfect!
The best chocolate I have found to freeze dry is Chocolate milk. I make a few gal, 1 gal = 4 trays. Add a bit of water to already freeze dried chocolate milk, make a paste and then add to things you want to freeze dry again. It is so yummy and it keeps a nice color.
Can I through in my two cents worth. I have discovered that cutting taffy in quarters works better with scissors. Put a little cooking oil on the scissors before you start and things don't stick so much.

Taffy is a cinch to cut with kitchen shears if you microwave it for a few seconds. I nuke about a dozen wrapped pieces at a time until slightly pliable, 6-8 seconds.

For your chocolate try using coco powder and mixing it into something you can freeze dry well. Its the milk fats and coco butter that is keeping it from drying right? Does a high coco % chocolate do any different instead of using milk chocolate ?
When you do Candy or really anything. How do you know how much extra dry time should you add. Basically I’m worried about something finishing when I’m asleep or not home. What do I do? Thank you!

I think there are some clear-front mylar bags... or maybe even vacuum-sealed jars? Any way to make the presentation as beautiful as the gift themselves? Thanks! I'm enjoying your channel and have learned a great deal (and also purchased the tray corners, dividers, and 'upgrade kit'!
It will depend on their storage environment but you could store them in mason jars with an oxygen absorber for awhile. Just be careful with dairy. Keep it out of light in storage. Good Luck!
Maybe try Cocoa-powder? ...combined with something else like sugar that would 'react' during process...or something that gives better result while using the process to your advantage....good luck on the chocolatey experiment! Awesome work! Very Cool!
Alcohol has a lower boiling & sublimating point than water so you get just a touch of flavor if you use a spiced rum but all the alcohol is gone before the water is pulled off. If you just want the flavor, we have had decent luck adding rum flavoring to the eggnog before freeze drying.
Getting a freeze-drier and watching all these videos on different freeze-dried foods is going to kill me. As someone who has a somewhat violent reaction to mouth noises this is really not good for my mental health! 🙉🤣

You could, but every bit of the actual alcohol will evaporate and be drawn out through the pump. It vaporizes before the water does, and then cannot be frozen onto the inside of the chamber. So it all has to go out through the vacuum pump which may not be good for the pump or its oil. But the main point is that you will not retain any of the alcohol in the dried food. However, I have to think that some of the flavor compounds in various booze might remain and add to the flavor of the dried egg nog, which may actually be a good enhancement. So it would be alcohol free, but maybe have the flavor of the whiskey, rum, or southern comfort, etc.
Retired at 40- Live.Life.Simple. In my years of candy making, I have found that scissor work best. Rub a small amount of oil or butter on the blades. Cut towards the tip of the blade. And chilling it for a few minutes before cutting (not too long) also helps

for taffy, I heat the piece
s for 7 seconds in the microwave and use my kitchen shears to cut them into fourths. They are nice little bites
I like the green with the peppermint topping very cute.

Add 24 hours of dry time in settings, that way it will not complete u til you get to it.

Candy will store for a very long time. The oldest I have is 4 years old so far.

Newbie here. How the heck do you get the frozen eggnog out of the cube trays?
Taffy: don't "chop" as that causes the knife to get sticky, instead "slice" through each piece. Much much easier.

so talk about junk.....if you are using conventional dye that is so bad for you.....you can by vegetable based colorings! so much healthier!
I thought the same thing. Do not use commercial dye. It is poison.
