I tried this recipe today, fantastic! I live in the UK so no Chili’s restaurant and I can’t compare to the original. This recipe makes the best goujons ever, perfect batter! The honey mustard sauce is great. Thanks
Great video! These chicken "tenders" look amazing. But unfortunately they're not Chili's Original Chicken Crispers. You almost got it, but are missing a couple of steps/combining a couple of recipes. As a 20+ year veteran of Chili's and a Culinary Training Manager for my area, I can assure you that these are true statements. The Original Chicken Crispers are made from a tempura batter and they're battered in a wet/fry manner. Meaning that you take raw chicken, dip it in a wet batter and then fry it. This is much in the style of English fish and chips. I can Imagine that in the OG Chili's store they made a beer batter or even used soda from the bar gun, but once they expanded they delivered cases of bagged flour mix that I'm sure contained of course flour, powdered eggs, powdered buttermilk, and baking soda to achieve the desired effect. Your Honey Mustard is pretty spot on! With the exception that there is much more mayo and honey. The scratch recipe is a little bit lighter in color than your dressing. The Chicken Crispers that you made are almost a combo of two recipes that were combined to make a new product in the 2000's. That was the Crispy Chicken Crispers. They were a scramble to make a new product that would WOW the masses and they delivered. This involved the blossom batter, a faux egg wash and more blossom batter. It was the recipe for the Awesome Blossom, and the Onion Strings that garnished so many of the Chili's dishes of that era. The procedure was this: make the blossom flour (blossom four+ blossom spice) consistency
@Jason Wright I am sooooo UPSET and ANGRY that Chili's discontinued the "original" chicken crispers! They only have the Crispy one and the glazed one. I want to replicate the "original" one so badly at home. Could you reply with what I need/some measurements please? Is it tempura batter or beer batter?
@@Babs11285 Honestly the recipe in the video works really well as a copycat as long as you just switch the batter and flour steps. Put the chicken in flour first, and then put them in the batter, and then fry them. tastes so close to the actual original crispers.
These chicken tenders look so good! But I think for chicken crispers is flour then batter.
2:05 I use that technique on my fried fish and chicken, but I replace milk with buttermilk

I typically use it 5 to 6 times before I change it. If fry something in it using flour, I may use it up to 3 times.
