我覺得An的意思並不是不要放花，而是不要放“沒有意義‘’的裝飾，感覺是最近法餐蠻流行的趨勢。 去思考食物的本質，去掉無謂的裝飾，每個裝飾都有其意義&想要表達的味道，但這些元素可能對於我們凡人來說真的吃不懂+吃不出來+沒有意義😂

對哦其實那道蛋奶凍我覺得那個花是必須的，因為沒有的話整道菜的顏色有點沉悶，加了那個花，看上去真的像一個小花園一樣。至少視覺上加分了很多✨

Chef Ahn has already explained the issue about flowers. He said it is okay to use flowers or anything to deepen the beauty of the dish.
But, in the context of Mafia cuisine. He uses too many flowers. So that it covers the main dish. Mafia dishes do not look like food.
From that I understood what chef Ahn meant. It's okay to use flowers, but don't make it more than the main dish.
