We never saw any sign of Elena ever actually being in love with Matt, so there was no reason to be jealous. She just cared for him as a lifelong friend, so if him and Caroline wanted to be together (esp. when she was already into Stefan), why would she have a problem with it?

However, if they die while that blood is still in their system (Which is 24 hours), then they wake up as a vampire in transition.
